Thai flowers go beyond mere aesthetics and are also celebrated for their culinary and medicinal value, rooted in the local wisdom of natural remedies. In this article, we explore the world of Thai edible flowers, diving into their culinary uses and health benefits and distinguishing the edible from the inedible among these botanical gems. What is the difference between edible and inedible flowers? Thailand has a variety of flowers, but not all can be consumed due to the presence of toxic substances. They are typically categorized into three groups: 1. Edible flowers can be eaten fresh or easily incorporated into various dishes, such as lotus flower, banana blossom, and butterfly pea. 2. Partially edible flowers can be made safe for consumption such as by soaking in saltwater or boiling. Examples include Siamese cassia and Crateva magna. 3. Inedible flowers are toxic under any circumstances and should not be used for culinary purposes or as a garnish due to the presence of substances like cardiac glycosides, which can impact heart function. Examples include oleander and desert rose. Many edible flowers are also wild greens, or edible plants that native to Thailand, and some flowering trees are also considered auspicious to plant in your garden. That being said, Thailand NOW does not encourage foraging for random wild flowers! Leave that to the experts. Floral foods: Thai flowers in main dishes Banana blossom or hua plee Banana blossom or banana flower are also known as hua plee (หัวปลี) and are the edible part of the banana tree found at the tips of banana clusters. These blossoms are characterized by their tough, purple-red outer layers, with the most desirable portions being the light ivory leaves located in the center. Those who have tasted banana flowers often liken their flavor to that of artichokes or bamboo shoots. They offer a combination of an astringent and mildly bitter profile with a slight crunch, resulting in a relatively mild taste. Banana flowers are a nutrient-rich source of high-quality proteins, dietary fibers, and essential vitamins. They also exhibit a favorable soluble and insoluble dietary fiber balance, surpassing many other dietary fiber sources and various vegetables. Additionally, banana flowers show promise as a galactagogue — foods that aid in increasing breast milk production in mothers. You can often find banana flowers served as a side dish alongside pad Thai, but they also feature in Thai spicy salads like yum hua plee or spicy banana blossom salad. Yum hua plee featuring mud crab, a special chili jam, and lemongrass is served at Paii, The House on Sathorn. Tips: To prepare banana blossom, remove the outer red layers, then slice the inner layers into wedges and immediately soak them in water with a dash of salt or lime juice. This helps prevent the sap from causing discoloration. Lotus flowers Lotus flowers, with petals that can extend up to 25 cm in shades of pink or rose, are aquatic plants that follow the rhythm of the day, blooming in the morning and closing with the setting sun. Lotus flowers are prominent across various cultures, particularly in Thailand, where they symbolize purity due to their association with Buddhism. Lotus is celebrated for its numerous health benefits, including remarkable antioxidant, anti-inflammatory, and antiviral properties, as well as cardiovascular and anti-bacterial advantages. In the realm of cuisine, lotus flowers offer a subtle, mildly sweet flavor accompanied by a satisfying crunch. Their popularity is gaining worldwide recognition, exemplified by the popularity of lotus flower tea, a unique infusion of dried lotus flowers. In Thai cuisine, lotus petals are also used in Mieng Kham Bua Lhuang (Lotus petal miang kham), a Thai appetizer with a royal heritage. You can savor this royal treat at the MICHELIN-starred restaurant Suan Thip. Agasta/Sour Katuri or dok khae Agasta or Sour Katuri flowers, also known as dok khae (ดอกแค), bloom during the rainy season in Thailand. These flowers are typically ivory white or red, the latter of which tends to be a bit more bitter. They have a charming butterfly-like shape with a hint of mushroomy flavor. Agasta are rich in beta-carotene, vitamin C, and antioxidants. In Thai cuisine, you’ll find agasta in gaeng som, a spicy sour curry or soup. “Som” refers to the use of tamarind, which provides the dish with its distinct tartness. To prepare these delicate flowers, one common method is to boil them, as they can be bitter raw. When boiled, they make a perfect pairing with Thai chili paste (nam prik), offering a delightful culinary experience during the rainy season. For those seeking a more creative gastronomic journey, consider trying the Smoky Southern Yellow Curry with Blue Swimmer Crab, Hummingbird Flowers (Dok Khae), and Thai Samphire at Paste, a MICHELIN-starred restaurant by renowned chef Bongkoch ‘Bee’ Satongun, who earned the title of Asia’s Best Female Chef in 2018. Sesbania or dok sano Sesbania or dok sano (ดอกโสน) features charming pea-like flowers with bright yellow, velvety petals and a soft, appealing texture. When consumed raw, these flowers provide a satisfying snap and a sweet, green flavor similar to sweet peas. The pistils are usually removed to reduce bitterness. Once cooked, sesbania soften, absorbing the flavors of the dish. They’re also packed with nutrients, containing high levels of fiber, beta-carotene, vitamin C, and iron. Additionally, their calcium content is beneficial for maintaining strong and healthy bones. A great way to enjoy sesbania is in a spicy salad known as larb dok sano. Cowslip creeper or dok kajorn Cowslip creeper or dok kajorn (ดอกขจร) in Thai, is frequently featured in various Asian cuisines. These small, golden-yellow flowers are known for their rich and fragrant aroma during their summer bloom. They impart a cooling effect, making them a popular choice for treating heat rash and aiding in sleep. In Thai cuisine, they play a versatile role, from gaeng som to omelets. Jasmine essential oils also have antiseptic and antibacterial properties. Beyond its ceremonial and therapeutic uses, jasmine also finds a prominent place in Thai cuisine. One age-old Thai practice involves infusing jasmine flowers in cold water, creating a refreshing beverage that helps combat the sweltering summer heat. Jasmine water is also a key ingredient in Thai desserts like thong yod, made with egg yolk, sugar, and rice flour, crafted into delicate droplet-shaped golden balls. For tea lovers, renowned Thai tea brands like ChaTraMue offer a variety of jasmine teas. These teas, including jasmine tea and jasmine tea with honey, are made with green tea leaves harvested from the lush Thai mountains, providing an invigorating way to enjoy the essence of jasmine in every cup. Butterfly pea or dok anchan Butterfly pea or dok anchan (ดอกอัญชัน) is a flower that resemble a butterfly in flight. The petals are used as a natural dye and can be used to create color-changing tea. Kra-jeab daeng should not be confused with the Thai word for okra, kra-jeab. One of roselle’s main benefits is its high vitamin C content, making it a natural antioxidant and anti-inflammatory agent commonly used in the treatment of urinary tract infections. Polyphenol-rich extracts of roselle have also been associated with reducing both systolic and diastolic blood pressure. BANGKOK (NNT) - The Senate has held a discussion on the government’s key economic stimulus program that aims to boost the economy by providing Thai nationals with preconditioned digital money. However, the program faces criticism over its high costs and potential inefficacy. Supachai Somcharoen, Second Vice-President of the Senate, recently hosted a forum titled “Perspectives on the 10,000 Baht Digital Wallet Policy.” The policy aims to jump-start the economy by providing eligible individuals with a 10,000 baht stipend through a digital wallet. Yet, the initiative has come under scrutiny, mainly due to budgetary concerns. Several stakeholders, including professors and academics, have called for the program’s cancellation, arguing that the benefits do not outweigh the costs. They also criticized it for focusing on short-term financial relief without considering fiscal discipline. The Senate, as a neutral political institution, invited various parties to share their opinions to formulate solutions that can be forwarded to the government. During the forum, one notable speaker, Pichai Chunhavajira, an advisor to the Prime Minister, stated that the program is likely to undergo various changes. For instance, the number of eligible citizens may be reduced from 56 million to around 40 million to exclude the wealthy. The budget for the initiative, approved by the Parliament, is expected to be less than 500 billion baht and will likely be delayed until September. Furthermore, Pichai said that conditions limiting the use of the stipend to a 4-kilometer radius of registered residence will likely be scrapped, opting instead for spending within the same district to ensure broader distribution. BANGKOK (NNT) - Following the government’s policy to open the country, there has been a significant influx of foreign investors establishing businesses in Thailand since September 2023. Karom Phonphonklang, Deputy Government Spokesperson, disclosed that after the government implemented a policy to open the country, Prime Minister Srettha Thavisin has been engaged with foreign investors to instill confidence. This interaction led to substantial investments in Thailand, thereby creating jobs and increasing the country’s revenue. In September 2023, 59 foreign investors initiated businesses in Thailand, with 22 seeking business licenses for foreigners and 37 requesting business certifications for foreigners, totaling an investment of nearly 18.23 billion baht. Most investors hail from Japan, China, and Hong Kong, employing 1,219 Thais. These investments also facilitated the direct transfer of specialized technological knowledge from the investing countries to Thailand. This expertise ranges from industrial gas safety, electric vehicle infrastructure design concepts, agricultural machinery, agricultural equipment, and advanced machining techniques for joint operations. The Deputy Spokesperson further noted from a report assessing permissions for foreign business operations in Thailand under the Foreign Business Act of 1999, that in the first 9 months of 2023, 493 foreign investors established businesses. This breaks down to 166 obtaining business licenses for foreigners and 327 attaining business certifications for foreigners. The cumulative investment value stood at about 84 billion baht, resulting in the employment of more than 5,700 Thai nationals. The Bank of Thailand (BoT) is considering four measures to reduce Thailand’s household debt to about 80% of gross domestic product (GDP), down from the current 90.7%, according to Ronadol Numnonda, deputy governor for financial institution stability at the BoT. He attributed the increase in public debt to a series of crises in the last couple of years, including the COVID-19 pandemic, which have plunged many people and businesses into deeper indebtedness. He said that the first measure, to be introduced in January, is responsible lending, under which financial institutions must be cautious and more responsible in extending loans, taking into account the existing household debt of the borrower. Chai said that the Thai prime minister voiced his support for economic cooperation between Thailand and Laos, to turn Laos and Thailand’s north-eastern region into a growth area for mutual benefit, with both sides agreeing to facilitate bilateral trade to the tune of about US$11 billion per annum within the next two years. A 45 year old suspect under an arrest warrant from the Southern Bangkok Criminal Court, was apprehended by the police in Nakhon Ratchasima yesterday around 8.40pm. The charges relate to his involvement in an online gambling gang, deceiving the public by impersonating others and maliciously manipulating computer systems to show false information, potentially harming the public. The suspect, Wanchai, confessed that a friend from his village, Surio, invited him and four others to work as accountants for an online gambling gang operating from a ten-storey building in Poipet, Cambodia. The suspect, who claimed he was unaware of the operations on other floors, was restricted to the fifth floor. He revealed that each member received a salary of 20,000 baht per 15-day period. He had opened four bank accounts and last travelled to Cambodia on August 16 returning on August 29. Subsequently, Surio invited him to work again but the police apprehended him before he could leave. Wanchai was handed over to the investigator at Thung Mahamek Police Station to further pursue the case. The 47 year old father, Jitpol, was struck by lightning while in bed, a fatal strike witnessed by his wife and two daughters. The family’s home, a wooden structure with a zinc roof, was inspected after the unfortunate lightning strike incident. Inside, investigators found a bed placed on the floor, a shirt belonging to the deceased, and 7 baht in coins. Also found near the bed were three torches. In recounting the events, 16 year old Kwan Khao and Jitpol’s elder daughter shared that her family, including her mother, herself, and her younger sister, typically slept together under a single mosquito net. On the morning of the incident, heavy rain accompanied by thunder and a lightning strike triggered her fear of storms, leading her to seek comfort near her father. Jitpol was responding to his daughter’s request when a bolt of lightning struck him twice. The horrifying event unfolded before the eyes of his family. After the strike, Jitpol collapsed and lay face down on the floor. The dead man’s brother, 43 year old Yod, sought help from Thai social media celebrity Kannarat “Gun” Pongpaiboonwet after the legal process for the death of his younger brother, 42 year old Chokchai, had gone nowhere. Gun accompanied Yod to Phahon Yothin Police Station to follow up on the case and he later gave an interview to the media about his brother’s death. Yod accused Chokchai’s wife, 50 year old Wongduen, of being the killer and urged officers to press charges against her as soon as possible. Yod said Chokchai had been subjected to Wongduen’s violent behaviour throughout their relationship. On October 2, Chokchai’s company car called at his condo to pick him up for work but the driver and his colleagues were unable to contact him. Police swooped to arrest a Nigerian drug lord’s three Thai wives and five foreigners in a drug smuggling operation at a house in Bangkok’s Nimit Mai district. Kirisak Tantinawachai, acting commissioner of the Narcotics Suppression Bureau (NSB), said officers had uncovered a drug trafficking network in Thailand controlled by a Nigerian man called Joseph, also known as Mickey, who lives in Nigeria. The man transferred cocaine and heroin to his gang in Thailand for distribution both within the kingdom and abroad, including Australia, New Zealand, and Taiwan. The gang also laundered money in Thailand by using the cash to buy children’s clothes, shoes, dried fish, etc., and shipped them to Nigeria through a company owned by Nigerian nationals. The NSB officers carried out the anti-narcotics operation called Mouse Hunt today, October 27, to arrest the gang members in Thailand. They raided 17 suspicious locations and arrested eight suspects at a house in the Nimit Mai area.
