My wife is from Mae Suai. We get dent corn from her brothers or from a local supplier up there and make tortillas everyday for all of The Duke's Restaurants. Corn meal is something else and you can not make tortillas or tamales from it. you can buy it from a lot of shops in CM.
You don't need a mill to make masa. You take the corn and put to in a pot with water and lime and bring it to a boil. Then you turn it off and let it sit overnight. The next day rinse it and grind it twice through a meat grinder or you can use a flour grinder that they sell locally that they use to make rice flour. This makes a paste that resembles Play Dough. I have never made it but I think Masa Harina must be this dough dried and then ground again to a fine consistency.
Lots of corn in Mae Suai. I've thought about doing a roadside OTOP there where the locals make corn chips and salsas and sell them as cars are passing by just like the sell the corn on the cob just north of you. They already have all the ingredients, corn, tomatoes, garlic, lime, onion and salt. Would be nice for the people driving the road to buy chips and salsa.
