  1. Hi All,

    I was wondering if anyone knew suppliers who sell hydrocolloids (xanthan gum, lecithin, guar gum, gellan, carageenan etc etc...)

    I know that American European products sells them but they are under the Ferran Adria (El Bulli) brand Texturas so they are unnecessarily expensive and there is a limited selection.

    If anyone has any advice I would appreciate it.

  2. Hi All,

    I was wondering if anyone knew where to to find Chicory Root. Im looking to use it as a coffee substitute. It is quite common in the USA, where it is baked/roasted and ground/steeped just like coffee.

    On wikipedia I saw that it is commonly used like this in SE Asia as well though I am guessing they are probably referring to vietnam not Thailand.

    Anyway, if anyone knows where I could possibly find Chicory I would really appreciate it.

  3. I'd recommend trying out the breads at Central Food Hall Chidlom......the head baker is swiss german and makes very serviceable baguettes and rye loaves.....everything is make fresh daily and its probably the most consistent bread i've come across in Bangkok

    Lenotre also makes a decent sourdough baguette, though they consistently bake it quite pale....but a sprinkle of water and a few minutes in the oven does a pretty good job in reviving the crust

    the weather and the flour in thailand will always be a major hindrance to the kind of bread we are used to in the West

    Im also an aritsan bread baker and was curious what kind of flour you are planning on using? The Thai flours are all highly bleached and are of inferior quality to European and US flours, but the Eurpoean flours are prohibitively expensive.

    My advice in terms of location would be to attach yourself to a pre-existing living complex where there are a guaranteed constant of foreigners.

    In Bangkok, I would advise Nichada which is out in Chaeng Wattana which is a massive housing complex of foreigners with many stay at home moms and very few good food options....

    In Phuket, there is something similar though not quite as large called Laguna which is comprised ot several different hotel chains as well as short/long term houses with lots of foreigners...

    There you could try to get a space inside or just outside the complex in an area called Chern Talay

    Thank you soooo much for all the advise. Seriously, I wouldn't even thought about many of the places without your advise. My initial thought was somewhere in Bangkok and Phuket because I live in Bangkok. For Phuket, I went there for vacation and saw a market potential.

    Initially, I actually didn't think about Pattaya as a potential place (I just didn't think about it!!). Now I see that there are demands, however, there are a lot of competitors. It's also not my favorite place to live.

    I actually didn't think about Surin neither. I went to Surin couple times. you are right, it is hard to find a good bakery there!

    Bonobo, thank you for your advise around Pinklao. I actually live around that area. My goal for this bakery is for westerner. So, yes, I discounted my Thai customers. That's why I didn't think that Pinklao could be a good place. However, now you make my head a little more clear that there might be some potential here....and I SHOULDN't discount my Thai customers.

    I'm really looking at Sukhumvit. However, it's very risky to do business there. I'm really in a dilemma.

    Again, thank you so much for all your advises. Everyone gave me valuable information and ideas for the shop. I'll keep my ears open and searching for the right locations.

  5. Elefin Cafe on Sukhumvit soi 1 roasts their own beans iin small batches so the coffee is really fresh and quite enjoyable...

    Another good company is Coffee Works......two professional roasters from the US and both really nice guys with good products

    I personally think that the locally roasted beans will always be superior to anything roasted abroad and shipped here as the time it takes to get here naturally oxides the coffee and makes is more bitter

  6. I've just seen that the Central Food Hall in Chidlom carries a new brand of rolled oats by the german company Hahne.....they look pretty good compared to the McGarrett brand

    I will have to check ou Makro's rolled oats and see the difference

  7. Also Foodland, Big C and Villa Market have them. The brand name is "McGarrets".

    I totally agree that the Quaker brand is not worth eating.

    Thanks for the responses.....but are you sure that McGarret's brand is not pre-steamed as well?.....I've seen them before and I thought they were the same as the quaker brand...I"ll have to check them out again

  8. corned beef is just cured or brined then boiled beef brisket.....this canned kind is a really poor version of it

    you can get real corned beef from Simon the butcher at Top's Central Chidlom...but have to order in advance

    then as a brunch/breakfast hash with potatoes, onions and a fried egg as well as any other spices you want to add, it is truly delicious

    its a staple diner food in the USA

  9. Hi All,

    I was wondering if anyone knew of suppliers who carry Rolled Oats. The instant quaker oats are quite common I know, but I am not looking for these. These are already pre-steamed and dehydrated and do not have the same hearty flavor of rolled oats. I'd prefer to buy them in bulk if possible.

    If anyone has any suggestions, I would appreciate it.
