There are no "multiple Entry Tourist " Visas
TVs are issued by the number of entries permitted , 1,2 or 3.
There is no 90 day rule , you were misinformed.

Marry the G/F. You could then apply for a Visa based on marriage and/or an extension of stay also based on marriage.
If work is not an option the only other possibility is to undertake some form of approved education using an Ed visa.

The options are limited.
However...............A Thai Elite membership would suit your needs.
There is no theoretical limit to the number of tourist visas but some Embassy's/Consulates will refuse to issue after a period of time.

There was a report about 2 people not traveling together with a visa run company being refused entry in Nongkhai with a tourist visa. they were pulled out from the van....

Tourist visas are easily obtained from a Thai Embassy/ Consulate in Australia..
To work in Thailand requires the prospective employer to apply for the Work Permit in Thailand.
A non-B visa can be obtained from a Thai Embassy/ Consulate in one of the nearby countries. The application must be supported by documentation supplied by the employer.

The the course could be undertaken using a tourist visa.
If ,after completing the course , your son wishes to work he will need to obtain a "B visa and a work permit.
