Guys, I have been following a Keto diet for over a year and I had done Adkins in the past.
Probably one of the biggest challenges is getting bored with the limitations of what to eat. Eggs, bacon, cheese and steak are great, but that stuff gets old.
Being in Thailand, I always enjoyed ice cream now and then and that was something that I missed on Keto. I had an ice cream maker that I bought years ago and after about 6 months eating low carb, I decided that I was going to make some good low carb ice cream that I could eat whenever I wanted to.
I did got a good base recipe and then started trying different flavors, as well. My friends all said that it tasted amazing and couldn't believe that it had no sugar at all (only Erythritol and Monk Fruit).
They told me that I should start making it for others, because not many people have an ice cream maker or the time to figure it out.
So, today, we just soft launched Smiles Creamery, an online Creamery and Confectionery based in Bangkok.
Turns out that if you start making stuff like Cookies and Cream, you need to make some low carb Oreos for it. And once you start making Oreos, you end up down a rabbit hole of scones and chocolates, etc. Long story short, that is how I ended up adding the Confectionery, as well.

However, unlike another company here in Thailand, our stuff is made with real cream and is real ice cream, just without the real sugar (and super high carbs).
