    my thai chef has been working with me now for 2 years . she is very smart girl , but dosnt speak much english. and we teach each other our differant cooking styles .we have alot of fun in the kitchen ,and our working relationship is built on mutual respect . the wait staff come and go as the seasons change , hi and low . the trick with keeping good staff is simple . dont be a boss . be a leader . teach them and show them respect , and they will follow .  ohhh and pay them accordingly.

  3. its not just in shops and markets either . i remember one evening ,going into town in a red bht bus with 2 other thai girls i didnt know . about half way there the driver stops and kicks us all out just so he can cramb in 12 chinese tourists . 

    all 3 of us were gob smacked . since we were all going in the same direction i offered to shout them a tuk tuk ride the rest of the way . 

    it turned into one of the most awsome nights iv ever had in LOS. :biggrin:

    Personally, I'm a big fan of cooking bacon in the oven - laid out on a baking tray with a tablespoon of water and away you go... takes about 30 mins which gives you plenty of time to deal with any other prepping you have to do.

    when you do it in the oven like that ,try a lite sprinkle of brown sugar over it . simply awsome .

  5. after 5 years iv never once found even a half decent piece of bacon ,anywhere in los , its all crap . and what really s , ,ts me is the way they all cut it so thin ,30 seconds in a hot pan and its shrunk to less than half its size .  :sad:

    And you are telling us you can't be a manager?

    not at all mate . my work permit is for a chef , my g/f manages the front of house and i manage the kitchen and the staff .

    hah, i have no idear mate . i only bourght my own company with my g/f to support my own visa and work permit ,to enable me to run the restaurant i bourght 3 years ago . am on my 3rd workpermit now . so yeah , i dont know much .

    not true . he could get a work permit as a cook or chef. if he has the qualifications , the same goes for a manager,you need to be qualified .  but the work permit will only allow you to work in the kitchen . you carnt wait on tables or any front of house, work . in fact you could be busted for just being behind the bar .  not only that ,if you dont make a certain amount of profit in the first year after paying tax and ss for your self and staff ,you would loose your company and all the money you put into it .  think carfully my friend .

    whilst not the same it reminds me of Saudi Arabia where the authorities take your passport no discussion and if you want to go out of the country you have to apply for an exit /re entry visa without which you will stand no chance of leaving. I am sure members can understand the relief when you finally get the "exit only" stamp there.

     

    how much is the Exit / reentry visa and how long before travel should you apply?

    no problem . can get it at immigration at the airport befor you leave . think it cost 1900thb

    thats exactly what i have done for the last 3 years . but it only costs me 23kthb and a trip to bkk immigration . to easy .
