I have completed the registration and received the "success" notification. However, I only uploaded my passport data page and did not include the page showing my visa. At the time, I couldn't figure the work-around for uploading two photos into the form. Now, I worry. I would like to edit and update my registration but don't see how.

This "newest system" is not just for "first shot only". That wording is to indicate that the sign-up is only for individuals who have not already had a first injection.... it is not for individuals seeking a second injection to go along with their first. The Ministry of Foreign Affairs for the Kingdom of Thailand is the agency operating the sign-up and there is a quite clear explanation of the particulars on their Facebook page. And, on that FB page it is stated that both injections will be Pfizer.
