  1. Asking tourists to show they have the means to support themselves is fair enough. I have read of reports though when a person without the cash has been refused the opportunity to go to the ATM to withdraw the required monies. That is utterly wrong.

  2. OK.. I may or may not be slightly off topic.. if so excuse me..This forum is about Smoking Meat and that is my objective!!

    Question. What is the normal or average length of a Whole Pig; aprox 35 kg dressed, head on in Thailand? is there a range ?

    Also, is there a forum dedicated to Low and Slow Smoking or is this it?

  3. the in-oven ones are neat as you usually find that the oven temperature is wildly out of calibration per the indicator or the little dial gauge on the oven door window, by as much as 50% sometimes (300oC indicated but around 200oC actual)...

    with an expensive roast in the oven you need some accuracy...

    I bought on line a Maverick,.. Multi Probe remote IT is GOOD! about 80 or 90 $ on the web they mailed it out no problem and even it took some time, it is worth it.. and NO I own no stcock in the comapny it IS just a good product. I found Instant read thermometers in a lot of areas.. truthfully buying on line is not that big a hassel as it once was.. just don't be dumb, do some reaserch

  4. BBQ ! My Favorite Subject!!! (Next to Family, friends and Fun....

    Having Firmly Stood my ground on the issue of Which Oven for our at the time new home with my lovly wife.. she relented and allowed me to indulgemyself witha Large (American full Size) Gas Oven.. NOT Cheap, but we have never looked back... I think the argument that won her over was we asked Chefs and Rest owners where we liked to eat what type Oven they used, Gas or electrict.. Gas always won.. and the operating costs are much less than electrict ovens for those 4 to 6 hr slow cooking dishes we do sometimes.

    Many great tips have been passed on to you here.. Removing the membrane is one... A bit of Liquid Smoke is also a good idea in the marinade if you don't have a smoker.. it is 'almost' as good and does add the smoked flavor.. Available @ Villa.. I have seen it at Tops and Teso once in a while..

    I am fortunate enough to have a Large Gass BBQ made of Cast ALu. Big and Heavy so holds heat and very good temp control.. Also a Remote Digital probe Thermometer, MAverick is a good brand on line about $100. and I did not get hit by the Taxes.. Maverick Mailed it to me!

    Check out a "Smoke Daddy" on line google.. you attach it to your BBQ (A covered kind, not an open grill so an Oven BBQ..) You burn the Chips in this 'Smoke daddy and the smoke is forced thru the BBQ area by Air form an attached aquarium pump!! It burns for 4 hrs or so and you can re fill it all without having to open the grill!

    A marinade I like that is simple is your favorite BBBQ sauce diluted with apple juice a dash or 5 of Liquid smoke. a bit of Salt helps in this as well,..

    After the soak of 8 hrs or so, I save the marinade (I heat to boiling in the Microwave for a bit , and put it thru a strainer.. then add Honey as a Base during smoking.

    Anyway afet the marinade, dry the meat off with paper towles (a lot of them) then apply a Rub!

    Rubs make a BIG difference. I try to leave my meat in a rub for 4 to 8 hrs. For a rub I use say 1/4 cup of Paprika, 1/4 cup Brown sugar, Bunches of fresh ground Black pepper, Chilli pepper flakes and 3 tbl spoons sea salt. Oil the meat with Rice brand oil or a good quality oil, Olive oil is ok, but if you go ver tempreture it burns sooner.

    I bring my BBQ Oven up to about 210 degrees F Get the Smoke thingy working, and once up to temp on goes the meat. Thermometer probes inserted and then I do not touch it for 3 hours or so.. I also use a water paan under the meat pan directly over the indirect heat / gas flames.. keeps heat level and the moister content up.

    After 3 or 4 hours, add more water, and maybe Baste the meat w/ left over marinade.. you can also dash on some Hot Sauce.. for this, instead of Tabasco, I prefer Crystal Luasnia Hot sauce, I feel it has flavor with the heat..

    Depending, you can wrap the meat , seal it up in Tin foil,.. that is called the Texas Crutch, it can make the meat tender quicker.. but destroys the crust / Bark on the meat unless you finnish it on the grill with open flame high heat to color crisp it up.

    Generally I BBQ all day and serve late afternoon.. or even the next day after warming it all back up either in the oven in the kitchen or on the BBQ Just re heat it slow..

    I kike that because while I am 'Cooking" I am not too good of company as I am always running to the grill and checking tem or water.. just futsying around..

    I cook Brisket to about internal tem of 190 F .. but you have to check.. for "Fork Tenderness" every piece is different and gives that moment of tenderness at its own temp. Pork Roasts over 165 ... it will hold there in that range.. called the Stall for hours while all the fats break down and the 'Goodness ' happens! when it starts rise again, begin checking for tenderness..

    A GREAT BOOK "Compitition BBQ Secrets" by Bill Anderson for around 30 or so $ is a great investment.. he has a site on line, you can order an e-version or the physical paper copy.. Nice Guy..

    I screwed up once when I ordered a copy for my Sister and ordered the e-version,.. I phoned him up, told him my balls up and said never mind I will re-order and pay for a Hard Copy.... he just laughed and said "Don't Bouter, Whats the address?" several days later my sister recieved the paper copy,.. no charge..

    For Me, THAT is the kind of person I want to do business with....!!

    Aside from the way this guy treated me.. the Book is GREAT.. If you are an experienced "Pit Master" it has some real tips and accessories ideas that are valuable.. even to people who Compete in BBQ cook offs proffessionaly. for a Novice, it explains just a lot of the 'Why" behind slow smoking BBQ and provides references if you want to keep researching.and varifying His tips!. IT has recipese for Rubs and Marinades, recomendatios for what wood chips to use with what meat,.. and it is presented witha Quiet confidence and an easy going humorous style..

    My Very Best friend here in Thailand was Wes Carroll. He and I had talked for years of many things, but we seem to always get back to the fact there was just no real "Shak Style Smoked BBQ places here that we knew of.. While I was in the USA for an extended family visit, he and his business partner opend Great American Rib Co. Born on the 4th of July! They did full upright smokers and smoke the meat for 8 to 12 hours depending on the cut. I Lost my friend to well, he died of living, and he certainly lived more than any man I have ever known.. In anycase, Great American Rib still has a restaurant on Suk 36 Bangkok worth checking out.. He had a branch in Pattaya.. but not sure if there is still one there or not. Worth a visit for Great "PIG"..

    Sorry for running on.. but WTH, it IS a Forum and hope you may have picked up an idea or 3..

    I also worked in Saudi, Jeddah, Dammam, Abqak , Ras ta nuri, Yanboo, and Al Mahad Dab.. So I feel ya on the no pork.... and did love the "Breakfast Beef" wink wink nod nod lol. There was a butcher shop in Jeddah , run by Lebonese, that had ..."Special Beef" Pork! a real treat once in a while.. And another quirkey fact, My friend was w/ the Japaneese Embasy and told me of a farm he visited near Taif that raised pigs!! He had no reason to make it up and had photos as well so........ A LOT went on there that was "Forbidden" as we all know who stayed there for any period of time.. for me, 1976 thur 1984 or so...maybe 86? I have not returned, but I sometimes wonder and would like to see certain places again.. Red Sea had some of the Best Scuba Diving I have ever experienced.... and I have been a LOT of places Diving, The Med, the Caribiaen, the Islands of Hawwi , south Thailand, Burma coast.. so I am not in experienced,.. Unfortunaetly I do not do that anymore.. just too lazzy or too tired. + my former wife sold all my gear 20 years ago lol

  5. I plan to try an I Moble 3G X SIM card. The plan is 299 B / month pre pay; for like 2,000 MB of data / internet and includes a BB plan. Operating on 2100 mhz. I hear the data is magic, and the voice is crap.. but that what I am stuck with for now anyway.. untill I work up the hutspa to completly DE Brand this phone.. A very low level programing task I am 'cautious' about undertaking.

  6. A bit of an update.I now have an AIS 12call Sim in the blackberry. Data works great everywhere I have been with the SIM in the phone.In town, Data and Voice work fine on this AIS system. But in my home area, Nong Chok / Lum Puk Chi.. near President Golf, Voice does NOT work. (One call / SMS and then need to reboot to make a call) Data again works fine,.I tried a DTAC SIM on pre pay w/ a Blackberry service, It worked fine Voice and Data for a few days in my "Home" location, then the Data did not work.. many calls to DTAC, no help.. Trip to DTAC center in Paragon, no resolve.. Again Data quit qorking, but Voice calls normal.;AIS 12call in and around Bangkok, Voice and DATA normal. At home, Data fine, no Voice.So now I am operating temp on 2 phones, one AIS in my Samsung for voice calls, (Contract Seranade customer for +10 or more years) DATA on the BB AIS Pre Paid 12 call DATA everyehre, Voice when in town (for me occasionaly as I live out here no need to go into town often)I have done a lot of research, so far I have unlocked the CDMA side of the phone and can reach and edit my CDMA Engineering "Service Edit Screen". I have edited my Mobile Directory # repalcing the old US phone # with my cell # here. and as well the IMSI_S# (same as cell #) I found and also edited the Mobil Country Code to 520 (MCC#) and the Mobil Network Code # to 01 (MNC#)There are some other settings I need to edit on this screen;The Home SID# (currently set to 4139) and the HOME NID # (Currently set to 65535)I do not know what the local AIS settings for this are.. so I do not know what to change them to.I further need theMO VOICE SO # (now set at 3)and theMO Voice SO Roam# (now set at 32768)This is low level engineering settings and AIS tech thinks I am speaking Greek, lol so far..I DID at least get them to give me the MCC and MNC #'s .. They seem to fear they are giving out "TOP SECRET" Data lol...I have not yet been succesful in finding what these settings should be for Thailand and AIS in particular.I believe it is related to the situation that THIS model BB is Primairly a CDMA phone with GSM capability (As opposed to a Primairly GSM phone with CDMA functionality) and that this side of the phone, the CDMA side, is still programed to SEEK Sprint Network first. over CDMA. and when the "Seek" fails or times out, things get weird.. and That happens in perhaps the somewhat dead / low signal area of Nong Chok (on the Voice side of the phone)So I f anyone can point me in the direction to find those settings it would be great.. AIS is still working with me and step by step they see WHY I want the settings so..... (Also many do not even know what these settings are or what they do... so they are reluctant to discuss them but a few do and get it..)I believe I will have to completly "DE-Brand" the phone, removing any and ALL trace of the origional carrier Sprint .. Beyond just removing the Sprint 'Splash screen" but ALL Sprint references ..ie the VENDOR ID CODE (104 = SPRINT) and all other US Sprint settings ..This is a pretty technical operation.. and I would still need the proper settings to re program the phone manually once I wipe SPRNT from the phone ..But I believe I will get there.. It has been a learning experience.. most would have thrown in the towel and bought a new / used BB.. but I like a challenge ;-) And I know way much more than I did a few weeks ago.SO if some GURU out there can provide the settings I asked for and or point me where to get them,, appreciated.. This is all somewhat low level stuff so.. there may only be a few of you who know / understnad what I am looking for..

    I do have a Blackberry Data plan, DTAC Happy..I am having "Issues" with the phone and I am trying to work my way through and get to a solution.

    It worked for the first 3 to 4 days fine, then DTAC advised they were having a problem with their Blackberry Server and I lost Blackberry service. And it has not been right since.. This is going on 3 weeks. I will say DTAC was good enough to re activate my BB Happy plan for free / no charge as I was not recieving the service I had paid for. So good for them.

    But there are a mirad of other issues with this device that are not making sense. Example, My brother in laws Blackberry 9300 works fine using My DTAC SIM and sitting beside me in my living room. or, my DTAC SIM works for phone calls and SMS, but my AIS SIM does not work for phone or SMS calls -- while at my house, in the City (Bangkok) the AIS SIM works normal. (Have not tried Data service on AIS).

    It is an "abnormal" phone because this model BB was not sold in Thailand; it is primarily a CDMA phone per what i can glean from the tech forums.. This results in Local Tech's and service centers do not have experience with this model.. it "Ain't in theri playbook" so to speak..

    I am taking it in to DTAC Tuesday and have the service Tech check it out.. incase there is a hardware fault / damged circuit et al.. and so he can diaignose the settings. Hopefully we will get a solution. or One step closer. And Yes, the phone is fully unlocked.. from the beginning, it was purchased unlocked.

    One thing I heard from an associate who owns a Blackberry; he said that a Blackberry device purchased from say, AIS would not work on DTAC SIM and vice vs.... Anyone have any experience to confirm this?

    I have a BB Tour 9630. I have learned that the phone is Primarily a CDMA phone.; although it operates as follows:

    GSM 900 / 1800

    CDMA 850 / 1900 / 2100

    I understand the DTAC has 3G service on 850 freq.

    Well I guess my REAL question is, As the phone operates as CDMA Am I screwed as CDMA is being shut down.. I have been unsuccesful in maintaining a network connection with either AISI or DTAC, So is this the root problem, that I am on a CDMA phone.

  9. ^ I think you have to have a Blackberry package in order to get onto the network. You can get wither a prepaid or post-paid BB plan.

    I was in Bangkok the last two days, I live out Hwy 304 in Nong Chok ..

    Very strange this BB worked fine in the city with my AIS SIM. But when I returned "Home" it did not work (Same ONE call after re-boot) My Brother in law plugged in his DTAC Sim and it worked fine. we tried His AIS sim in my BB and same result , One Call per re-boot. My AIS SIm worked fine in HIS BB..

    Very Strange.

    I did not get to AIS yet, but will soon. At least I know I can use the BB as a phone in Bangkok. Will get a BB plan / data plan soon.. Probably a Pay as you go ..As I would use it only in Cities I guess....

    The AIS SIM I have is billed monthly, It is in good standing and my other phone, a Samsung, works fine with the SIM.

    I have not tried a pre paid sim plan and I do not have a black berry data plan yet, I was waiting to see if the phone would operate properly first prior to buying / subscribing to a plan *121# and *139# do not connect.,... When I key in those codes and press the dial button, the device shows as if it is dialing the number and then "Disconnected" shows on the phone..

    The phone was operating fine in the USA on Sprint or T Mobile as far as voice calls .

    I plan to visit AIS and see if they will assist..

  11. Define "used"?

    There are many different versions of a particular RIM model, but it looks like the 9630 would work on AIS/One-2-Calls GSM network for voice and GSM data (2G:GPRS/EDGE, low-speed, up to 236.8 Kbps). AIS's 3G network operates on 900 Mhz.

    For 3G it looks like it may support 2100 Mhz so could be used with TOT/MVNO. Note that AIS does have a limited roaming agreement with TOT so you might be able to use AIS and roam onto TOT, but this is far from assured.

    I have an unlocked Tour 9630 I have am unable to use it successfully / reliably with my AIS SIM .My SIM is quite old and that may be an issue. AIS Call center were no real help.. but perhaps a trip to the AIS center would prove more fruitful ;-)

    Currently if I inset my AIS SIM and reboot the phone, It will make or receive exactly ONE (1) call or SMS after that it does not complete calls until I reboot.

    The Tour is an older model and not popular here in Thailand.. so that also may be an issue as far as knowledgeable support.

  12. Where do all of those immigration cards go anyway? Is there an enormous warehouse sitting somewhere filled to the brim with them, just in case they want to find out which hotel someone incorrectly wrote down? Is there a pile of paper sitting somewhere stating that we all earned enormous amounts of cash, and that we came with a tour group?

    Surprisingly YES the cards ARE kept.. and stored and filed by date and flight.

    I once had a problem where I had traveled with a group of friends and on returning to Bangkok. Immigrations had miss stamped my passport, ignoring my re entry permit and i year work Visa..

    I foolishly did not even notice this until near Visa renewal time..

    Panic city for me with many horror stories playing out in my imagination, I went to Immagrations, then on Suan Plu .

    Up stairs, down stairs and finaly out to the back . I ended up in the large warehouse like area, one guy behind a desk, racks and racks of boxes neatly on shelves.

    He looked thru a big ledger, checked my TM card # , and date of arrival and flight, Diss-appeared and came back with a smallish box containing all the TM cards from the flight. I recognized a half dozen fellow travelers from my group as he flipped thru cards.

    He found mine, had me fill in a new TM card, re stamped TM card both halves, and my Passport, re filed the corrected TM card, initialed all these stamp entries, sent me back up stairs for more Initials and stamps and boom i was done and no problem all smiles!!

    I would have never believed anyone could have found that little TM card!! Amazing indeed!

    Well lets see a 240 Cubic Meter Pool that can "resist" " 1 or 2 tons" of water pressure.. Kinda a wide reange there huh? a 100 % variance in tolerance?

    And let me see here ... a 1mt X 1mt X 1mt or 1 cubic meter of water weighs in pretty doggone near one Metric ton..

    OK, that's fine plenty of well documented safety margins and "Confidence building data" contained in That bit of news! I feel Sooooo much beter and am soooo much more informed now.

    We are and have been High and dry. Village is not even pumping water out from street drainage as the drainage system is also Dry.

    Driving in toward Minburri, Water is evident in the fields along the road side, but not threateningly high. Where Ramkamheang juctions with 304 (Suwintawongse) these is some (little) water but passable no problem.

    We are out Further by 5 or 6 km from Minburri than Floraville which flooded earlier on.

    So does that mean that 7/9/304 is still a viable route to and from Issaan into central BKK and Swampy? Important as 304 feeds the four roads north out of Prachinburi and Sa Kaeo provinces.

    It looks still clear on the flood map, as does the alternative 'feeder route' 7/9/305/33.

    Loads of people have returned to this Issaan village from their jobs in BKK. Much Lao Khao being consumed and a continuing interest being expressed on routes back to the big city.

    Yesterday my next door neighbor left with his family to Issan. He called and said he got thru fine.. but not sure what rout he took
