Sounds like a fantastic adventure. Could you post a report about it.
I would love to do a similar trip in the future. Best of luck.

Lots of smart Alec comments but I am telling you know she will not be allowed to leave Philippines
unless she completes a one day government course on sexual exploitation. This is from personal experience.
You can help by doing the following.
1/ Having her purchase the ticket in Philippines in cash not you with your credit card on line.
2/ $1000 US cash and how she earned the money for her vacation IE. proof of her employment.
3/ Hotel reservation confirmation in her name.
4/ Annulment of marriage if she has been married.
5/ If she says she is visiting you and you are divorced proof of your divorce certified by a Philippine embassy.
You may think I am crazy but I am telling you the Philippine immigration Nazis are ruthless. They are turning
away 10-30 women per flight who are trying to leave the country on a new anti sexual exploitation law.
If you don't believe me have her go to the airport and talk to the dozens of teary eyed women who have
been denied and missed there flights with no recourse, no refunds.

It is the responsibility of the airline bringing you into the country to make sure you have a ticket out.
Otherwise they are responsible and are fined heavily.
The real issue with the Philippine immigration is the enforcement of a new anti exploitation law which
pretty much will not allow women to leave the country. 20-30 women are offloaded (each Plane) from flights
leaving the Philippines. A friend of mine was flying his 34 yr old, long time GF from Clark to KUL and she was denied boarding
because of this new law that came into force Jan 1 2012. She has flown to Hong Kong, Singapore, and New Zealand in the
past with stamps in her passport to show it. This is the new standard in Philippines. To protect women from exploitation.
Even women with work visas and jobs to go to. At the discretion of airport officials the decision is final with no refund of tickets.
They pretty much deny all women and a few men from traveling abroad unless traveling with there husbands.

Keep track of all days and hours worked in a daily work diary. Report the situation to the authorities.
It is unfare to everyone including other restaurants who have to compete.
