  1. I, of course, am partial to my wife's apple pie. Maybe that's because she learned from my mother who is now 83 and still going strong. Her crusts are made using just butter, no margarine or other vegetable shortening. It's not easy to do, especially in this climate. Because if the butter melts before baking, the dough is useless. At any rate, Rim Ping likes her stuff so much that they have given her stands at Mae Jok and Narawat. Butter is Better is the name of her company. You can try free samples of pie there, although the pies do tend to disappear more and more quickly as they get better known.

    She does use granny smith which is an excellent apple for pies being tart, firm, and resistant to browning. It would be nice to use other varieties suitable for pie making, but Thais and most Asians tend to prefer apples that are sweet and low in acid. So we, at least, are grateful that Granny Smith are almost always in supply.

    I think the best ones are at Rim Ping Nim City. They actually make them from a classic puff pastry dough that they buy from a French owned company in Bangkok. I sampled them at the food fair in Bangkok and they were perfect. (At Rim Ping they were nearly as good. Just not baked quite so expertly.) You couldn't get a better croissant in France. You can buy the dough in Rim Ping's freezer section and make them yourself.

  3. Bake and Bite does decent cheaply priced bake goods, but when it comes to chocolate cookies, I prefer the expensive ones with lots of butter and chocolate! :o

    I'm probably shamelessly and flagrantly violating all kinds of proper net behavior here, but i think the prices at butter is better compare favorably to those elsewhere. our cinnamon buns go for 29 baht for example. And my wife put a lot of work - a alot of failed recipes - into them to create a bun that is tender and rich. It's even better if you heat it up in the microwave for 30 seconds. The same goes for the sticky buns.

    I must say this thread has whetted my appetite for a good, heavy - weight ,all-butter cookie. How unfortunate that I shall not be able to sample the delights that all you insiders drool on about as I have no idea where "Butter is Best" is located. But I expect you don't want to be swamped by old geezers just blithely walking in off the street without a formal invitation. I now expect to be told, "Well its so easy to find for anyone new ; its in the South part of the City"

    I guess we're suffering from megalomania and we just assumed that everyone would know. Right now, Butter is Better stuff can be bought at Rim Ping Nim City (opposite airport plaza). As of Monday Nov 10 it will also be in Rim Ping Mae Jo. Actually there will be a stand at Mae Jo where someone will be hawking Butter is Better products.

    Just one thing : I'm Swiss, so when it comes to chocolate, please don't talk about Belgian chocolate, we're talking about serious business here :o:D

    Point taken. Actually, the only milk chocolate I like comes from De Villars(?) which is a Swiss company.

    I love those butter is better chocolate chip cookies too. I have almost no connection with Butter is Better except that my wife, Dao, is the owner and chief baker. I know the cookies seem pricey but she uses a lot of belgian chocolate in them and lots of butter, no margarine. Also real vanilla extract which she makes herself from top quality Madagascar vanilla beans because she wasn't happy with the quality of the vanilla extract commonly available. Anyway, thanks on Dao's behalf for the kind words. She really does try hard. Maybe a little bit too hard

  8. I'm going away for a month and I want to hire a security guard for a month. I know from experience elsewhere that this can be even worse than having no guard at all: the guard knows that the home is vacant and whether by himself, or conspiracy with others, robs the home. So are there any bonded security agencies in Chiang Mai?
