That is the best way to go about it. 7 days 'sandbox' booking then free to travel. Removes a lot of the uncertainty. Picking the right hotel for your 7 days is a part of it. I wouldn't really mind that if I knew I was able to order decent food etc. I could not handle claggy boiled rice and weeds for a week.
