Am a British Citizen here in Thailand on a Retirement Visa. What is the process/paperwork for when I die to have my body collected and Cremated at local Temple

It is sensible to think about these thing and put some plan in place.  You could state your intention to be cremated at a local temple in a will and inform your spouse, family members, trusted friends or your care provider.

You could also consider taking out a prepaid funeral contract with a funeral home. More and more people are planning their own funerals in advance these days. This gives you the option to express your wishes and ensure that everything concerning your funeral is taken care of in advance. You should also make sure that your designated next-of-kin is kept informed of your intentions. When the time comes, the contracted funeral home will liaise with the Thai authorities and the British Embassy to process the necessary paperwork.
