Jockstar
I cant agree more. Its gotta be spicy. Many Thais say to me. its so spicy. I'm like i know. Thats why i order it. To answer whats my fav. Som Tam i love(with crab) or any Yum dish nua, kai, moo or nam(thai sausage). But i think my favourite might be nua manal. mmmm. Got its so hard to pick one. I'll try anything once. Went to Chang mai 2 months ago and my gf's mother made some awsome food. I'm hungry now.

taxexile
a fiery hot southern dish , available at most khaw geng stalls in southern thailand is kooa gling, with either finely chopped pork or chicken. its a simple stir fried dish , little oil is used ,the meat is fried with a special chilli paste, lots of peppercorns and some finely chopped leaves of something or other. usually comes over rice. its deliciously and fiercely hot,but never painfully hot and leaves the mouth and lips tingling for a long while after. the only place i've seen it in bangkok is the food court on the second floor at pantip, but there were no peppercorns in it , a serious omission ! if you are in southern thailand and enjoy very hot dishes then give this a try. otherstuff1957
I'd have to agree with the DJ - a good gai pad medmamuang is hard to beat. Aside from that my tasts are simple. Any of the various kao pads, Pad Kapao Gai, Goong Mai Farang, Kao Niao and Mu Yang or Gai Yang, Street sausages with cabbage, Etc, Etc... I havent' really noticed any correlation between price and taste when it comes to Thai Food!
