Many kids when they are photographed or think they might be, hold up two fingers in the 'v for Victory' salute, does this have any meaning in Thailand or is it simply nostalgia for 1945?

They refer to it as gratai 'rabbit' by which I assume they mean with regard to it's ears, as I have seen many put their fingers in this manner over their heads like floppy.

I still do that a lot in restaurants ........ it basically means: "two beers"

Don't you worry yourself. Its better than the middle-finger salute! :)

Throughout some parts of the world, all one would have to do is twist your wrist and the result is two-fingers at ya....eqivelent to the middle-finger extension. Perhaps this motion is a Thai {or Asian} twisted metaphore.
