Recipe For Fried Chicken & Cashew?

It sounds simple but what is in this dish, especially what is it that makes it moist?

For 4 people:

300 g chicken breast, thinly sliced

120 g deep fried cashew nuts (if frying them yourself, do it slowly)

45 ml oil

8 garlic cloves, crushed

2 small onions chopped

2 large, red chillis, sliced

125 ml chicken stock (or water)

4 spring onions, sliced

5 ml whisky

Sauce:

30 ml oyster sauce

15 ml light soy sauce

15 ml fish sauce

20 g palm sugar

Method:

Put oil in wok and add garlic. When garlic starts to colour add chicken, onions, chillis. Fry for about 3 minutes. Add stock. Then add sauce. Stir to mix. Add cashews and spring onions. Fry for about 1 minute, then add whisky. Serve immediately.

Another recipe 4 you:

Ingredients-

  • 1 lb chicken, cut into thin slices .
  • 1/2 cup cashew nuts .
  • 2 tbsps oyster sauce .
  • 1 tbsp chili paste .
  • 1 tbsp fish sauce .
  • 3 tbsps chicken stock .
  • 1 tbsp sweet soy sauce .
  • 1 tbsp honey (can use sugar) .
  • 1 tsp black pepper .
  • 4 cloves garlic, thinly sliced .
  • 2 tbsps rice wine .
  • 2-3 Thai red chili peppers, chopp

Process-

Step #1 Roast the cashews at 300F degrees until golden brown.

Step #2 In a wok, over medium heat, saute the garlic & chilis until the garlic is golden & the whole is aromatic, then remove & reserve the chilis & garlic.

Step #3 Add the chicken & all the ingredients except the cashews, stock & wine to the pan & stir fry until the chicken just begins to cook.

Step #4 Add the stock & continue over low heat/flame until the chicken is cooked, then using a slotted spoon remove the chicken from the sauce & set aside.

Step #5 Add the rice wine & reduce the sauce until a slight glaze appears (if necessary add 1 tsp of arrowroot powder, dissolved in a little tepid water).

Step #6 Return the chicken, chilies & garlic to the sauce, & add the cashews.

Step #7 Make sure everything is heated through.

Step #8 Garnish with green onions.

Step #9 If you enjoy vegetables with this, just add onions & carrots (or whatever) with step #3.

Step #10 Also if you want more heat, just add more chilis &/or black pepper.

Step #11 Serve with steamed Jasmine rice.

I reckon the perfect addition to chicken and cashew (aaprt from the obvious) are large dried red chillies. Roast them a bit in a dry wok as you would smaller chillies when making chilli powder. Then slice them roughlyand stir fry with the rest of your ingredients.
