Greetings all,

Re those 4 small bowls that are seen everywhere, and shoveled into guai thiao and other dishes. I believe they are:

1 vinegar with sliced hot peppers

2 sugar

3 fish sauce

4 chili powder

Question: is this "chili powder" the basic ground chili pepper/ground cumin/ground oregano combination which gives chili its distinctive taste, or is it a different spice? Seems this taste does not fit with Thai cooking...

Also, if anyone has a basic recipe for guai thiao I would be grateful!

Just basic ground chilli's on there own i thought,also you get the crushed peanuts at some places..oh and the fish sauce has chopped chilli in it as well.

the best stuff i find that you get given in some places. is the chillie that has been stir fried in oil, garlic and baby shallots.

#2, is it defo sugar, ive never tasted it but it looks to me like that MSG <deleted> they seem to love shovelling all over everything.
