IKONEast Posted February 23, 2010 Share Posted February 23, 2010 Greetings all, Re those 4 small bowls that are seen everywhere, and shoveled into guai thiao and other dishes. I believe they are: 1 vinegar with sliced hot peppers 2 sugar 3 fish sauce 4 chili powder Question: is this "chili powder" the basic ground chili pepper/ground cumin/ground oregano combination which gives chili its distinctive taste, or is it a different spice? Seems this taste does not fit with Thai cooking... Also, if anyone has a basic recipe for guai thiao I would be grateful! Thanks all! Link to comment Share on other sites More sharing options...
