  1. Preservatives. Majority of bread makers in CM don't use preservatives as the shelf life will normally be displayed as 3 days. Farmhouse toast has preservatives (I think)

    Not sure whole grain is all that important in bread.
    No sugar or preservatives is what I want.
    And to get that, I have to make my own.

    Not to mention, whole grain bread usually gets a wagonload of additives to make it rise.

    Some of Chiang Mai's bread products are made from refined grains. Refining helps make bread light and airy and gives it a longer shelf life.

    But it also strips away fiber, iron, and many B vitamins. "Enriched" just means that B vitamins and iron are added back after refining. But fiber may not be added back to "enriched" breads. Fiber is found in bread made with whole grains though, so that's your healthier choice.

    Which additives are commonly added by local bakeries? All bakeries?

    Let's hope some bakeries will step forward and tell us what's in their bread.

  3. 100% Whole grain bread will rise well using active dry yeast alone provided that you use the Peter Reinhart 'double fermentation' method. No need for any chemical

  4. Reading on a Thai forum can be difficult unless the OP hangout with Thais and have Thai gf/bf. Younger Thai persons now a day don't spell words right intentionally so to look trendy

    Thai is pretty squirrelly for a language to begin with, but reading the stuff on the forums can be difficult due to misspellings, abbreviations, and slang.

  5. 1) Red song thawes are not taxis. Generally red song thaews are not on fixed routes. Disregard other farangs claim to be experts on song thawes current price. You should pay 20 baht all the way otherwise tell the driver to complain to the police.

    2) There are the yellow and blue Taxi, real taxi. Use the Taxi Call Center phone number. Can not operate in the Airport area or Wing 41 airbase.

    3) Airport taxi, will pick you up anywhere and are permitted to enter Wing 41 airbase.

    OP: Thailand has a long history of coups, I have lived through more than I can count. In the past the impact on finance has been minimal.

    So tell us Sheryl...in the past, has curfew been imposed and for how long? Having arrived to start my life here in August of 2009, I can't remember what happened as far as any curfew in 2006 or in prior coup years.

    The reason I ask is if the protests were harming the economy, as they certainly were in the last 6-7 months, then this curfew, if it lasts long enough, will devastate the economy. Think of all the businesses that depend on doing business after 10pm such as all the convenience stores and all the 1000's of nightlife venues. What about buses, which I have not read about whatsoever if they have restrictions on travel after 10pm. Pattaya, a town in particular, that thrives on nightlife will be kicked in the butt economically and if you thought tourists were staying away during the protests over the last 6-7 months, then my guess is incoming tourists will now drop to a trickle so the airlines will be significantly harmed. Who wants to come to a country under curfew.

    So it all comes down to how long this curfew will last. The rest of it IS business as usual.

    I am a bit surprised to see the baht/USD exchange has not been affected at all by the coup or curfew...yet.

    Im sure you will get used to it.
