  1. Forgive my ignorance. I don't actually know that what he was offering were buffalo. They were off-white, with horns, and everywhere I see them herded on the village streets presumably to and fro feediing spots. Farmer I am not. LOL

    They were, however, very healthy and robust.

  2. I lived in a village in NST called Chian Yai. Horrible place, awful people. They'd walk up and laugh in your face and talk about you without even waiting for you to get out of earshot. Funerals every week, no lie. At times there were more than one a week, loud drunken pagan rituals all through the night. Murders, drivebys, street dogs had controll, there were thousands of them barking all night long. There were 40 policemen stationed there but they never did anything. One day there was a driveby near my house and my neighbor was there, he's a cop. A 20-year-old boy was shot five times. He said there'd be no investigation, I asked why, and he said the dead guy was a trouble maker. And here's the killer .. the population was 1600. Now when two people a week die in a town of 1600 ya just have ta wonder.

    No you do not live there you survive there."horrible place,awful people".I have never been there or know anyone there but why do you stay if you are in my opinnion in danger and unhappy very strange indeed!!!

  4. You never truly know what is in those meatballs.If the ones you eat are "beef" and they seem to chew like rubber then you are probably eating beef tendon meatballs.That is a mix of the meat and tendons from the cow and some spices thrown in.Thais do like them and me to that way.

No it is not really sick if you eat meat.What is the difference?It is an animal.And believe it or not, it really is not that bad.Just tough if not cooked forever.In Ban Tha Rae in the province of Sakon Nakhon they do drive around and pick up dogs to sell for consumption.And yes that is what you get for the dog ,one basket.I would not be suprised if that is where that photo was taken.That does not mean that all Thai people eat dog only that thay "sell" the dog for one basket.Some of them end up in the markets around Nakhon Phanom close to the Lao boarder.

  6. No, but we are thinking about having one. The grease fumes go everywhere! Either that, or get a really good exhaust hood for the stovetop.

    Our "Thai" kitchen in the US is outside and inside.If we are cooking bla too or something that makes alot of smoke or just smells very strong like bla too we cook outside.We also cook our khao niaow outside because the pot and basket will not fit on the indoor stove under the exahust fan.

    But maybe by the title of the post and photo they mean do you cook Thai ?

    You already have the answer but I have a photo here also.It is of four different types of plah rah(fermented fish).I personly do not care for plah rah.When you ask for "som tom Thai" it will not usally be in it.But if you ask for "som tom Lao" you will get it made with plah rah.I love food! :o

  8. Gai Yang /Grilled chicken Thai style /Thai Barbecue Chicken

    Ingredients

    2 lb chicken fryer (breast, drumstick, thigh and wing)

    1/3 cup Thai oyster sauce

    6 cloves garlic (minced)

    1 tsp black pepper

    1 tbsp Thai soy sauce (Healthy Boy brand is recommended)

    1 tbsp sugar

    1 tsp sea salt

    1/4 cup minced lemon grass (optional)

    Preparation

    Thoroughly wash the chicken and pat dry with a paper towel. Combine oyster sauce, garlic, black pepper, soy sauce, sugar, salt, and lemon grass (optional) in a bowl. Mix ingredients together thoroughly and apply as a marinade to the chicken. Refrigerate for at least 15-20 minutes (or overnight).

    Grill over charcoal at medium-high heat for 30-40 minutes, turning occasionally to prevent burning. (If charcoal fire is not available, roast in 375-degree oven for 30-40 minutes.)

    Remove from grill and serve with chili sauce / fish sauce-issaan style / dipping sauce for chicken

    Serves 4.

    The only thing I would change here is the pepper I would use white pepper.

    It is a vine,to wit Mucuna bennettii,commonly known as the Red Jade. It is origanaly from New Guinea.It is a very rare and hard to grow flower. Where in Thailand did you see this I am very interested?

    It says on there that they cost $83. Wow!

    Then it says that is almost double or triple the price of normal melons.

    $30 for a normal melon!!

    It could be because they are talking about Japan.Melons of many different types can (as you see ) go for MUCH money.All melons DO go for much money in Japan.

The Birian Lamb is an excellent one pot meal.It is not real hot but is highly spiced as are many Indian dishes.A side of yougart would be nice with the Lamb,sometimes it comes out of the oven a little dry.Make nan bread if you can if not use pita bread.I would recomend a Napa Cabbage and Chicken soup to go with it.It is just chicken,napa,garlic,onion,white pepper(not much) and the water and a little corriander on the table to sprinkel on the soup.With a touch of fish sauce,of course :o. For dessert, the name is lost to me at the moment.But you take corn off of the cob mix with sugar and coconut milk and heat to a simmer and remove from the heat and eat warm.Aroy mak mak!!I LOVE food!!!!!!!

    As to the rice we use a rice cooker and it is great,but then again we eat rice with almost every meal.The left over rice we just leave in the cooker until the next day when we will use it.Never any problem with that.If we are going to make khao phad (fried rice) we make the rice the day before and place in the refrigerator.When we use it the next day for khao phad we take it directly from the "frige" and cook it while it is cold.The trick is to use" day old and cold".Use a combination of Healthy Boy Brand thin soy sauce and Gold Mountain Brand soya sauce.This will give you a balanced flavor with little salty taste.It is "up to you"what you would like for the veg or meat.But cook them alone before adding the "day old and cold".Use an almost burning temperture and cook fast.Add bean sprouts,green onions and cilantro after removing from the heat otherwise they will cook to much,if you use them.Enjoy :o
