What are you cooking today? (2025)

Started by baking some baguettes; into the oven at 4:20am after kneading and setting them for a second rise at 1:30am. Then made pancakes for breakfast with chicken (for the wife) and pork (for me) sausages and fried eggs. Late morning baked a dozen butter cookies and will add lime frosting shortly. Lunch is reheated leftovers from yesterday and never eat dinner. -
I give my local guy in Pua 100 for a haircut and the same for a shave. He doesn't have a price list nor speak English but I'm assuming by his smile when he sees me and the baht that I've covered the price and there is a tip.

Generally found my local post office and delivery guy to be okay but about a year ago was told I couldn't include a small Sharp 44 year old calculator in a package to my daughter in Australia. Still stunned by the idiocy of it all but truly don't know which organisation/country policy/procedures is causing the problem. So chose to accept the rejection gracefully and take to Australia in a carry-on bag.

Only similar incident I had was a particular cashier in Makro. Suspected a short-change the first time. Deliberately got in her line a few weeks later and corrected her politely when she short-changed me 100 baht. (Believe I posted about it somewhere after this incident.) Several weeks later same attempt and my immediate polite intervention got me the 100 baht. Then reported it all at the service desk. Didn't think I'd been taken seriously but I've never seen her again. -

Went for a scenic drive a couple of days ago to a 1,200 metre Hmong village Ban Doi Tio on #4022 a bit to the west of Tha Wang Pha north of Nan city. Didn't bother taking any photos because visibility at the viewpoints was probably down to a couple of kilometers. Really didn't expect that this time of year. (Based on the number of brand new tractors/ploughs and two nurseries it would seem local agriculture and baby making are booming up there.) -
Was still Trump's DOJ on 6 Jan.

An Aussie living in northern Nan province for seven years. Married to a Thai ex-nurse for 15 years, been with her for 17. Prior to coming to start semi-retirement here lived and worked in Singapore, Dubai and Arizona for nearly a decade so haven't lived in Australia for over 15 years. COVID turned semi-retirement into full retirement unfortunately. I'm highly likely to return to Australia to live within 8-15 months with the Thai wife or she will follow once a number of matters are finalized here in Thailand. -

Married a solid 7 sixteen years ago and couldn't be happier. She is now in the second half of her 40s and has kept her looks, character, eQ and humour and I couldn't be happier with her. Although only one of us can say they weigh less than when we first met and it's not her. -
The wife and I plus three Labradors seem to use about 25,000 a month over the last few years. We live quietly and modestly by choice. We shop at Makro, Lotus's and Big C in the main and the only eating out is a local restaurant 2-4 times a week. We cook our own bread, bakery, majority of meals and eat a mainly western diet. If we lived closer to where quality beef/lamb, decent cheese, and burgers/pizza were available I could see a 5,000-8,000 a month increase would likely happen. (Plus an increase in my already excessive weight.) We own our own home and car, don't drink/smoke/gamble/lend to family and have been debt free for a decade.

Your interest in the names of kitchen cooking utensils is not something I find stimulating enough to research. If your interest level is high enough you could explore yourself. I'll just continue with my sauteing. But I will note that there is deep frying (full immersion) and shallow frying (partial immersion) and a frying pan is quite okay for the latter (and sauteing). -

Yeah, I spent most of my life thinking I was frying when cooking something in a pan with a little oil and/or butter is in fact sauteing. Frying involves cooking something in deep oil/fat, like fries. -

Not a single reference to "crackdown". So either nothing will happen or it will be ineffective anyway. Saw maybe 25-30 officers on one part of the 101 in Nan city yesterday morning getting ready to assure the rapid transit of a VVIP to the airport. Likely double that in central part of the city doing the same. Hardly an effective use of crime fighting resources. -
UFO's or Drones ? whats going on ?

Something very unusual, and whatever it is appears to be spreading to other spots in the US and the globe. In fact it appears to have first manifested around several US bases in the UK. Right now in NJ there appears to be a mix of unexplained drones/UAPs, legit (likely US military/govt) drones and conventional aircraft playing with one another. My gut feel is there is something to worry about going on, perhaps something potentially quite devastating or sinister. Despite the potential downside I find the whole thing fascinating. Loved the temporary closure of Wright-Patterson AFB air space within 24 hours of official US govt statements that there was "nothing to see here". -

Started making my own bread by hand two years ago after being dissatisfied with supermarket options and reliable availability here in northern Nan province. Started simply with a white round loaf oven baked in a cast iron camp oven. Then expanded the range to include a whole wheat loaf, a fruit loaf, then white loaf milk washed and with sesame seeds and a white loaf milk washed and cheddar cheese on top. A bit later mastered white and whole wheat bread rolls. Three months ago tried making white baguettes and they have become our favourite; we make 2-3 times a week now. Have also produced some fruit baguettes and just last week a whole wheat baguette. Really do enjoy it.

We've been trying to sell land and a 4bed/4bath home (build completed early 2019) in northern Thailand for 30 months without any interest. Priced sensibly, quality build, amazing views, western kitchen, undercover parking for four cars...listed on many websites, plus our own built site and the engagement of what passes for an agent here in the remote rural wilds of northern Thailand, two of them. We are yet to get even one inspection from a genuine buyer. Bit frustrating really.
