You need the money in your Canadian bank.
You will have to be in Thailand to open a bank account there.

Savannakhet Laos will issue a multi entry Non Imm O Visa without any bank details. 5,000 Baht fee.
For a 12 month extension at Immigration you need 400,000 in the bank or 40,000 monthly income
1,900 Baht fee.

You have to return on the date stamped in your passport.
There is a chance it may be ready early. Give them a ring.

One letter for each account.
Most immigration offices want it dated the day before or on the actual date.
Both accounts would have to be updated at the same time as the letters are issued.

You could get a 12 month extension from Immigration based on retirement.
800,000 Baht in the bank.
Your Wife could get the same 12 months based on being your Wife.
Zero Baht in the bank.
Don't muck about with expensive agents.
Go and have a chat with Immigration and do it yourself.
It really is not that difficult.
EDIT.
Just noticed that you are not married so forget most of the above.
You still do not need an agent though.
It all depends on what Visa you actually have in your passport.
Do you have a Non Imm O-A Visa and when was it issued?
A Non Imm O-A Visa is valid for 12 months from date of issue.
Each entry gives a stay of 12 months.
Giving a total of up to 2 years.
