Download and use the (free) Foxit PDF reader, which displays the forms correctly formatted and allows them to be filled.

It would seem that you do not have a tourist visa which would have provided a 60day stay. A visa exempt entry gives 30 days and the date in your passport is correct.

If you want to secure a different renewal date that can only be definitively accomplished by allowing your current extension to expire and reapplying, with a new visa, on a date of your choosing.

My actual adress(Bangkok) , or the one I am usually and where I do my yearly extension for the last 15 years (Pattaya).
The address you report should be the one where you are staying.

I have been in Bangkok before for a while, always put my Pattaya adress on the Online 90 days report, without problem.
My extension was done end January at Jomtien Immigration.
The online report was handled by Jomtien, not Bangkok. However, it is possible to submit a Change of address/TM30 on the same day as a 90day report is done. You should remember a fine may be payable if an address change is not notified within 24 hours.

You should remember that your extension of stay(based on retirement) is linked to the UK passport - it is not possible to transfer that extension to the Australian passport. There is also the possibility of the passports being linked but whichever passport is used for entry must also be used to exit. It is not possible to swap passports at land crossings.

Sorry, but unlike you, I do not indulge in Thai bashing. The chances of what you refer to as a "typical Thai" getting a Schengen visa range from nil to zero.
NB I did not use the word "typical", it was your choice to use that disparaging word.

Lucky lucky said we will get the news today by 5 PM. Either approved or rejected. Before we submitted the visa, we already been warned by lucky lucky that these days, the embassy may ask employment letter. We knew going to Vientiane will be easier, but i like coming to siem-reap and pp as i have not been there before. Also we have no any SETV.
I understand many are frustrated with the visa rules of Thai immigration here. Fyi, i am from Indonesia, have travelled to 9 ASEAN countries (not yet to Brunei) and had been a digital nomad for years in few countries. There is a good reason i picked Thailand.
Don't be surprised if (when) your application is rejected especially if it mentions "remote working"!

Expats can get health insurance, pre-existing conditions or not should still not stop anyone from health insuring themselves unless their able self-fund.

Once over a certain age securing a new policy with adequate cover can be prohibitively expensive

I suspect you only need a Thai translation of the certificate validated by the MFA prior to registering the marriage at an Amphur.

PP has always been known as 'difficult' and it sounds as though they have decided to ramp their requirements. IMO you should abandon attempts to secure a Thia visa in Cambodia and seek, as others have suggested, a visa from an Embassy in a different country.

Not true some Thia Embassies only offer visas to citizens or those with formal residency status. Also, citizens of many countries cannot get a visa outside of their home country

NO- A single entry visa provides ONE entry. If you wish to travel during the 90 stay the visa provides you must buy a re-entry permit - Please note the re-entry permit does not give any extra time in country
