Some jobs like stoop labor result in long term physical impairment. Slaughterhouses are dangerous places to work. Given the high level of lack of fitness among Americans, such jobs would be especially taxing.

Whether more Americans will be willing to do this kind of work for higher pay is a matter of conjecture based on the notion that levels of employment don't very depending on the actual tasks. Agriculture for example covers a huge variety of jobs. So just because in aggregate a majority of workers in agriculture are US citizens, that doesn't mean that enough will be willing to do stoop labor or work in dairy farms. There's a big difference between driving a harvester in an air-conditioned cab or picking strawberries under a blazing sun.

I can only surmise that they do it because it's a lot more cumbersome to fact check a video than it is to fact check the written world. Obviously heat pump technology has massively improved over the last 20 years and can now be used in much colder climates than in the poast. As for your claim about heating the evaporator unit taking "a lot of energy" (whatever that means) there's this: Enhanced Vapor Injection (EVI): This technology allows compressors to operate efficiently at extremely low temperatures by re-injecting refrigerant to increase heating capacity. That and other developments I cited above give the lie to this claim of yours: "There has been no significant improvement in AC/heat pump technology in at least 20 years."
