Yep, that is brisket. Was always a family favourite as a kid. My Mum would tie a large piece into a roll. Then brown it in a heavy pot in a little dripping/butter. Once lightly browned she'd add an onion, a couple of small carrots plus an eggcup full of water. Put it on the lowest heat and cook for around 4 hours. Once tender it would be removed and thinly sliced. The juices in the pot would be skimmed and thickened into a rich gravy. Once the gravy was ready the sliced meat would be returned to the pot for a few minutes before serving with mashed or boiled potatoes and seasonable greens.

Lazy Sunday evening meal.
Thick sliced Palma ham and some salami. Cherry tomato, avocado and goats cheese salad.
Accompanied with some new age PC "high bake" water biscuits that ain't high bake these days. I can remember when they were almost burnt crisp and had a delicious nutty/toasty flavour... Not now it seems.
Too carcinogenic and dangerous for softy millennials ?

Apologies for being absent. Finally back home and in my makeshift kitchen..
Salmon en croute is the dish if the day.
Nice sized chunk of fresh Scottish salmon, topped with spinach and wrapped in some of foodlands best frozen puff pastry :)
Only 5 minutes to throw together and 25 mins in the oven.. Easy as, but always a pleasing result.

I lived in a nice village for almost 10 yrs. it was initially well run. Once handed over to a residents committee it was still well maintained for a few years. But slowly over time as the demographic changed less and less fees were collected. This let to lower quality security and less money for communal lighting, pool servicing and gardening. Now it consists of a few nice houses ( the more expensive ones ) surrounded by slumlike poorly maintained cheaper ones. This to me is the main disadvantage of a village where there are a mix of properties. The lower end townhouses or villas usually end up in disrepair with owners unwilling to pay maintenance. I moved to a single house in it's own grounds. Less neighbors, less dogs, and only fees paid directly to the tessabahn. I would never buy in a village again unless it was a very small development with houses of similar value and owners who could afford to maintain them.

Yes. Awaiting a kitchen. Been cooking in the sala on a cheap induction hot plate and a portable gas ring for a couple of years now. The induction cooker recently had a meltdwn so only gas now. Only a few more weeks till I get a real oven and a five zone ceramic hob though :)
Can't wait to start baking and roasting again.

:) I do make em occaisionally. But currently down to only a tiny gas ring in the garden so cooking with more than one pot at a time is difficult.
I prefer to call them "game chips" rather than the more proletarian "crisps"

Still miss the old Denny's in the basement of Orchard Towers Singapore. Had some great "after party" breakfasts in there. It was pretty popular with Thais too back in the day..

What ever next ? Advise to go down to the river and rub your shirts and socks on a handy rock ? How about making your own soap from ashes and lard ?

Go buy a front loading automatic. Fill it, press the button and go find something more fun to do.
