    Our whole wheat bread is dairy free. I'm ashamed to say that we don't even have any butter in it. I double checked with the baking staff and re-read the recipe just to make sure.

  2. Where do I find their store?

    We have 2 stores, Inside the Rim Ping Supermarket Mee Chok we have our bakery outlet. It sells our baked goods but it's not a restaurant. No chairs or tables. There is however, free coffee. it's open 7 days per week from 9 to 9 PM. But often the deliveries don't get there until 10 PM.

    Our restaurant /bakery is located on Chang Klan Ave about 100 meters south of Pantip Plaza and almost opposite Giorgio's Restaurant. There is 1 hour free parking here. This store is CLOSED ON TUESDAYS. Hours are 8-5 every day it's open except Sunday when it's open 8-3.

    As ulyssesg noted, whole wheat is a lot better for you than white flour. Not only does it have a much lower glycemic index than refined flour, but it still has lots of those annoying nutrients we apparently require.

    And when we label one of our products as." whole wheat", that means it's 100% whole wheat. Most of the baked goods sold in Chiang Mai as whole wheat are really mixed wheat, often with no more than 25% whole wheat We are fortunate to have sourced a really good supplier of freshly ground whole wheat flour that doesn't have the bitter taste that whole wheat flour often carries. Possibly because it is so freshly ground.

    Because I'm a stickler for accuracy when it comes to baking terminology, I can't say we offer baguettes. What we do offer is a baguette shaped Italian style bread. Like a baguette it is allowed to rise slowly to develop it's flavor. It has a crunchy crust like a baguette too. And the big holes and chewy texture of a baguette. Unlike a properly made baguette, the dough isn't a combination of old and new dough. Rather, each batch is 100% freshly made dough.

    We used to make baguettes but because they took extra work, we charged more and had a hard time selling them except to a few desperate French expats.

  5. eating fas never been correlated positively to raising cholesterol. read the published science, it's true despite the hogwash that's been perpetrated for the last 30 years about it. your cholesterol changes most accutely in response to you:

    -sugar intake

    -sleep (lack of it and quality)

    -exercise

    -stress/smoking

    ..pretty much in that order. Stop eating sugar, stop staying up late, stop drinking if you do so more than moderately (1 or 2 a day). Walk more. Get some real exercise if you're healthy enough to do so. Stick to lean meats, legumes, leafy veggies and brown rice. Fish is great. Fat is ok, just don't guzzle it and never mix it with sugar if you can help it. Olive oil, animal fats, avocaods, eggs, these are ok fats. Avoid fried, avoid trans, and some people do better on less dairy. Avoid most noodles, which is hard in Thailand, but glass noodles are ok, they are made out of mung bean flower and have a very low glycemic index. Unless you're Thai or from somewhere that lots of sweet fruit is native year round, lay off the mango, rambuttan, and other sweets. There really are regional differences in physiology for people from different places in regards to insulin response, and health outcomes.

    Salt is appearing to be something people eat way too much of and are just waking up to. In Asia, I imagine this is even worse than in the West. Go light on the soy and fish sauce.

    Popular anti-cholesterol drugs have just recently been shown to increase cancer rates, so whatever you, don't start them. Also, there's a great deal of clinical evidence that they do little to nothing to actually fix high cholesterol, they just confusingly deflate certain markers we look at, but not the damaging inflammation that actually causes coronary disease.

    But I am healthy, and struggled with health for a long time growing up, and this advice has allowed me to be medication free and live well. I am prone to high blood sugar and cholesterol by nature.

    Just recently a metastudy came out and .while it mostly back the position that cholesterol consumption has no effect on cardiovascular illness there is an exception for people with insulin problems. apparently egg consumption does adversely affect their cholesterol levels Here's a link to the abstract:

  6. We have two 10 year olds who have just finished 4th grade at an international school. Does anyone know of some kind of summer program here that is something like camp would be in America? I've seen various English school summer programs but we think their minds have been improved quite enough for the time being and we are looking for something that might deliver a bit more fun..

  7. A month ago I set out to make some lemon meringue pies and had the same problem. I checked YOK and CM Bakery with negative results. I also hit Carrfour, Big C, Rimping and Tesco with no better results. However, I do remember seeing them before at one of those places but I guess they stopped stocking them. So I tried to make my own gramcrackers but they did not turn out. In the end I made my lemon meringue and cherry meringue pies with a plain buttery flacky crust, they turned out good and everyone loved them. My latest pies have been chocolate cream and banana cream pies and I have continued to use the same buttery flacky crust for them as well.

    Yok has a new branch on the Super Highway or whatever that road is called where Carrefour is. It would be on the opposite side of carrefour. if you were to cross the narawat bridge heading east you would follow charoen muang road until you get to the highway. turn left and it should be about a kilometer away. it's got a big sign and is very easy to spot.

    Good news for you! We are scheduled to go on it when they do their next update. Below is a tentative list of what we will offer. Most of our baked goods are listed here with the exception of products that either can’t survive the heat, or if they do, you might not survive eating them. In the latter case I’m referring to baked goods that contain custards which have egg in them. Most of our cakes with icing are in the former category.

  11. The wife and I tried this place a few days ago, and lo and behold, their coffee is simply divine. We both are budding coffee snobs, and didn't expect anything beyond the ordinary. The menu already indicates that this is a place that cares deeply, and is enthusiastic and forthright with the plan of operation, ingredients used, the fact that the cheese blintz is a recipe passed down over three generations (four?), etc. So, for coffee, it explains how they use "peaberry coffee beans" (sorry, I'd never heard of it), what they are, and how they are basically really tasty. Also, they use a ___ machine (forgot the make), which is meant to be top top notch. Anyway, we couldn't stop ordering cafe lattes, they were so dam_n good.

    As for the food, we recommend anything that is baked. Scones, pies, bread or cakes - it all looked and smelled great. As for the menu, it seems to also cover many "comfort foods", though missing a few spots (imho). Grilled cheese sandwiches, BLTs, lots of peanut butter items, even sausage and biscuits, which they didn't have the day we went.

    Two request to the owner:

    1. We figured there would be a special emphasis on butter (I know that's being quite literal), but no butter came with the bread we ordered.

    2. put some ham on that menu - i.e., a ham and cheese melt. Ham and biscuits, etc. Or did I just miss it?

    Anyway, it's a new place, with two owners (farang and Thai wife) who are trying very hard to make their customers happy. If this cafe being a sponsor of Thaivisa makes one cynical, don't be. I'm giving this place "big ups" purely on merit. The food can be a little pricey, but you get what you pay for. Coffee is exactly on par with most cafes.

    You're right about the butter. I thought our staff did serve butter with the bread. I'll look into it.

    And as for ham and swiss, we really should do that since my wife is now making real deli rye with caraway. It tastes just like the rye I used to get from the jewish bakeries on the lower east side. Which I suppose makes it a sin to profane it with ham. Actually, I did buy GM ham and real Emmentaler (commonly called Swiss cheese although ours comes from France) last week and promptly forgot about it. I'll see about getting it on the menu tomorrow (Thursday, may 26).

    I do keep track of our prices vis-à-vis our competitors and I think we mostly match them although occasionally costs necessitate a somewhat higher price. We do make our sandwiches pretty big. I guess I should check our competitors’ prices again.

  12. We have added quite a few items made with 100% whole wheat flour... We are thinking of adding jam made with coconut palm sugar to the top of the peanut butter cookies. Does that sound interesting to you?

    I tried the whole wheat pancakes with unrefined palm sugar syrup today and they were really tasty. The natural jam on whole grain peanut butter cookies sounds like a good idea too.

    I don't want anyone to get the wrong idea about our restaurant. While we do make lots of 100% whole what versions of bread and pastry, you can still eat at our place and feel plenty guilty. The main disadvantage we labor under in being deleterious to your health, is that we don't use transfats such as margarine or crisco. To counterbalance that, I like to think that our pastries, pies, and cakes are so delicious that you will eat way too much of them.

  13. Butter is Better has added some vegan, 100% whole wheat baked goods that no one else in Chiang Mai has - although they do not have them every single day: whole wheat biscuits, cinnamon rolls, cookies, etc. They taste good and are more healthy than the white flour versions.

    They also are selling the famous Elvis sandwich with natural peanut butter, bacon and bananas that Elvis used to love.

    We have added quite a few items made with 100% whole wheat flour. Such as scones, cinnamon buns and sticky buns. We found a whole wheat flour that stays soft in pastries so even the sticky buns and cinnamons buns stay very soft.

    We are also currently making whole wheat peanut butter cookies. They are made with our own home made peanut butter and no oil is added. These cookies are vegan since we use coconut oil as a shortening. They are sweetened with unrefined coconut palm sugar which according the always reliable internet has a low glycemic index which supposedly puts less stress on your endocrine system. We just like it because coconut palm sugar tastes great. We are thinking of adding jam made with coconut palm sugar to the top of the peanut butter cooker. Does that sound interesting to you?

    The only thing they lack is any wholemeal/grain flour

    which you can get at Rimping (Where the bread flour is rather expensive!)

    I don't see how Yok is superior to Bakersmart. They both carry a lot of things in common and each also different things that the other one doesn't. But since the original query was about flour for breadmaking, in this regard Bakersmart is clearly superior.

  15. For bread flour, the best place to go is Bakersmart. They carry unbleached flours. I've never seen unbleached flour at Yok. Unbleached flours are generally reckoned to be superior for bread making. Unfortunately, Bakersmart doesn't identify them as such. But if you go to their flour section, you will see various types of flour in clear plastic bags. These are mostly imported from Australia where bleached floursl are banned. Also, if you compare bleached to unbleached, you will note that the unbleached flours have a yellowish cast to them.

  16. Don's in Chiang Rai, Phuket and elsewhere but not unfortuately in Chiang Mai does sell chipotles. Last time i spoke with them they said that they were reorganizing the business- making it strictly wholesale - and would be ready to ship to chiang mai in June of 2010.
