  1. I use the double cook method. I cook them the first time at 160 C until they start turning the golden color, drain and spread on top of paper towels. When they are cool, put them back in the fryer at 175-180 C. I have a good deep fryer so I think the thermostat is pretty accurate.

    Using US Russet potatoes, I only cooked them once and they were fine. With the Thai potatoes, even using 180 C and cooked until quite dark, they are still limp.

    I was told that finishing them off in an oven works well. I don't have an oven so have not tried that method.

    One more thing. After you cut your potatoes, rinse them well to get the excess starch off and allow them to dry. I use the deep fryer basket to drain the water and allow them to dry.

    This poster is right on target. ALL commercial food vendors use russet potatos for french fries. I used to own a bar and food service in the U.S. and if I want to make a bit of a mess, the twice fried method is perfect. 300F for 5-6 minutes, Cool and then finish at 375 F. I have tried everything and cannot duplicate with various thai potatos. Here in LOS, crisco shortening works well.

    The only way I get crisp fries and hash browns is to buy the frozen fries.

  2. I got a big hassle when I brought my dog back from U.S. after a 6 month visit. The vet in the U.S. made out the wrong forms for thailand and of course that required me to pay to prevent quarantine here.

    Suggest you find out specific requirements for tests, shots and paperwork to avoid.

    For the 40K a month income, can I show gross rental income and not show mortgage AND taxes+insurance on my rental house in the USA?

    It looks like Kuala Lampur is the place to go for a multi entry non immigrant O visa if I decide to buy a condo, and have less than 400,000B in the bank. Is there no Jack Golf Cambodia run for those?

    Yes, you will be extended for 1 year from your original entry date. The demonstration of monthly income is a letter from your embassy witnessing your affadavit stating whatever you put on the paper. Can be any kind of income as long as you swear to the amount.

  4. Masters degree, car, job and above all having travelled to many countries and returned should be sufficient for tourist visa. Applying is the only way you can be certain. The U.S. is mainly concerned with her having a compelling reason to return to Thailand. Unseasoned money in her account may not be beneficial and in fact, harmful if they believe you put it there just to get visa.

    Go for it. No penalty for turndown.

    We have a Lao citizen, applying for a maids job that makes border runs every thirty days to stay in Thailand. We did papers for one Karen here, but big hassle. She believes she can obtain a Thai work permit in Laos, or something equivalent. Having been through several maids, this one seems to be ideal, although she does not have a work permit and we want everything to be legal.

    Does this sound correct?

  7. You are not likely to be able to obtain PR under the situation you have outlined (no paid work in Thailand). Your other questions are best answered in the real estate forum so will move there.

    Where did you get the idea you need PR to buy a condo? Permanent residency is not a requirement for most condos. Are you talking about a visa extension?

  8. Due to grey market, black market, previous history, etc, buying a car here is fraught with danger.

    Assuming you meant 9k per month, the full price of the car including interest for over four years is 570,000 baht. I can't conceive of a 2009 model car (and are not taking about a pickup truck), selling for such a low price. No finance involved? You don't know how it is being paid for? You are going to depend on him making the payments? This has to be a windup.

  9. Last year I needed a letter. This year I got one and submitted it with my embassy afidavit. The immigration officer said I would not need one next year due to my income statement. Even though I was over the requirement, it was close and if the dollar got weaker, I could have dropped under.

    This year I had increased the amount on my embassy statement due to having to draw on my other pension. That apparently put my out of danger of exchange rate making a difference.

    Yes, your personal and private information may be compromised without encryption and you cannot encrypt, he has to.

  11. I was talking about the legit localized version ones that cost 500-700 BHT. Pirated ones goes for way less.

    I have many of these games, all FPS. I have found no differences between these and those I buy from Amazon in the U.S. Some are UK versions. Only makes a difference when you want to patch a game.

    Some here in Thailand the instructions are in Thai and with one exception the on screen text and speech is in English. After playing several hundred of the latest games, the instruction booklets are not very necessary anyway. The one exception is Crysis, which for some reason is all in Thai including the screen.

    The pirated games need to be cracked, many don't load and most won't uninstall. I would not trust them to be virus or adware free either. Buyer beware of these.

  12. I have an oven too, and use it nearly every day. I made full thanksgiving turkey dinner for my wife and some Thai friends. It cost about 8 times as much as a nice dinner out.

    And the Thais politely tried the turkey, dressing, sweet potatos and pie, but brought shrimp, som tam and noodles.
