My Mrs got some sweet potato at the market today that I haven't seen in Thailand before.

They look a bit like long thin potatoes with pure white flesh. I've eaten them in the Philippines and think they are the best of the species.

The pure white flesh is very hard, I slice them without peeling, boil them a little then either deep or shallow fry.

They crisp up very nicely.

I might try roasting them with pork tomorrow.
