October 23, 201114 yr The shiitake mushroom seem to keep fresh in the refridgerator for 1-2 weeks or longer in some cases. But there is this ball-type of mushroom that is white with small amounts of brown color when you first buy it fresh. In 2-3 days, it can turn brown quickly, in the refridgerator. I'm wondering if I want to keep these ball mushrooms (or any other mushrooms that spoil quickly) for a couple of weeks, what are the best methods of storage? freezing? vacumn seal? etc. Sometimes the market will not have them when we go, or I do not want to travel to that market and would prefer to purchase in bulk.
October 23, 201114 yr Fresh keep them stored dry, dark and between 4-7 Degree Celsius, so in a close container wrapped in kitchen/ tissue paper in the refrigerator. Protect against brown color cold water with lemon juice, but can only keep them for day or 2.

November 2, 201114 yr For keeping button [champions] mushrooms for long term storage, I buy them cheap in the winter months where in season costs are down to 75thb/k and saute them in a little oil or butter, then place in food storage bags and frezer and are excelent for cooking. I have some from last year and they are still fresh tasting.
