If you're a dark chocolate lover you're going to love this. I was reading the comments following a Mike Adams (the "Health Ranger") article called "Chocolate consumption lowers stroke risk and heart disease incidence by a third" and a poster named Louis recommended this:

Mix raw organic coconut oil, raw organic cacao powder and raw honey to taste, and refrigerate.

Play around with the recipe making fruit n nut, coconut rough and one of my favorites honeycomb using bee pollen. So easy and fun to get the kids involved!

I did so (the first part, and wow, it's a chocolate lover's dream come true. No more guilt-inducing sugar-laden chocolate bars shipped from another continent. Make yer own!!!! Ten minutes in the freezer and it's perfect! Put oil in a small bowl, stir in cacao powder slowly and thoroughly. The cacao powder will thicken it some, and the honey will finish the job. Try not to eat it all before chilling it ;).

I only know the Chiang Mai area. BTW, I don't know how organic my ingredients are, but I use high quality stuff. I buy my cacao powder at Yok. One day I was in there and two Thai reps of a Danish(?) company were there to answer questions about their various products and they sold me some in a plain plastic bag for a very good price that works just fine. I buy my coconut oil at Rimping Supermarket. It has just been raised to 550 baht per liter (was 495). Green and white label with lots of Thai but in smaller English lettering it says Parisut, Organic, and cold pressed. I also get my hney there but forget the brand name. Hope this helps.

Also coconut milk and raw soft coconut meat goes well. I blend up coconut meat and some coconut water which has sweetness with cocoa powder. Can chill or freeze or just makes a nice room temperature or even warmed chocolate pudding.

The Yok cocoa powders are good quality for the price. They just buy in bulk and repackage. They have three different grades of cocoa powder which differ slightly in color and taste and I am guessing it related to how they are processed.

A lot of other shops like Rimping, Tops, Makro, Big C carry the same brand powders for just a little more cost. It's usually in the baking supply section.

Can mix all sorts of things into the mixture for variety like

yogurt

various nuts, Macadamia nut pieces work well

dried or fresh fruits

Spirulina or other green powders

sea salt for minerals and taste

dried coconut flakes for texture

sure I have before. Coconut meat and milk are pretty much the same stuff.

Depending on how firm the meat and blending time is then it varies the texture nicely. Can also add coconut oil for a thickener.

Cinnamon goes nicely in blended coco meat and coco water.

Mmmmmm, I'm definitely going to try your ideas. The hardest part will be to put the coco water and meat into the blender before I eat it

because it's my favorite fruit, but since cacao is involved I think I can do it :). Will report back when I get around to trying all this out. I love cinnamon, too.
