Back in Oz for the winter I want to cook up a few Thai dishes. I found pla ra in a Vietnamese grocer and it's pickled mud fish which I'm looking for but it's a grey colour .

I want to turn it into the dark version by adding shrimp paste and other stuff to make naam pla ra tom.

Anyone know how it's done?

I think you are referring to ปลาร้า. If you do i am interested what you mean by naam pla ra tom. Smelly fish cooked?
