I am on multiple entry tourist visa from Hull, going to Laos today. The leaving stamp is for the 27th, can I have a night in Laos and cross back to Thailand tomorow?.

I am 99.9% sure I can but the rules seem to change with the tide, someone told me Vientienne has changed drastically so just wanted a one night nosey, Thanks.

Tourist visas are for a specific number of entries (not marked 'multi' as non immigrant visas) so if you have an unused entry available and the visa is still valid you can stay as long as you want and return for that entry. The 27th is your current permitted to stay date or the expiration date of the visa as stamped by Hull. In any case a return on the 27th should be fine if another entry is available.
