Sounds like an inside job. Why else wouldn't the shop walk the walk? All that talk and then wasting valuable time... Very fishy IMHO.

Go settle - for much less than 30 grand. Or involve the cops yourself. And ask for evidence of this P.I. being hired - sounds like more b.s., TBH.

The Wave 125 is a great bike. But with over 60,000 km on the clock it won't have a FMV of 30,000 Baht. Who knows how old it is??

Drive a hard bargain and buy theft insurance next time.

The owner clearly doesn't want to deal with the police. So tell him that either he reports it or you dont pay. Then of course he has your pport and he will say that he is not going to give it back to you. That's good..tell him that if he doesn't give it back you are going to go to the police station so he will need to deal with them anyway. So either he tells you the truth now or you are going to report that he doesn't give it back and he tries to scam you.
