Itinerary and recommendations for motorbike trip from Chiang Mai to Poipet,Siam Reap & Phnom Penh

I plan to leave Chiang Mai about the 26th of December. But how many days before I get to Poipet, Siam Reap or Phnom Penh, I do not know. I may make the small detour to Bangkok depending on the availability of friends there. But I have never travelled even towards Bangkok in anything but a plane before, so want to make sure I see and do as much as possible enroute while I have time and the flexibility that I have when I travel with my motorbike. I would be grateful for any tips or suggestions as to best itinerary, guesthouses to stay at and not to be missed sights enroute. This would be for inside Cambodia as well. I will be travelling alone on my Honda CBR250R and already have an International Driving Permit, Cambodian Visa and a pending insurance policy for my bike which I own.
