I am trying to find the word for castor (caster) sugar. The following 3 versions came up:

1. น้ำตาลทรายบริสุทธิ์เม็ดเล็ก NAM TAN SAI BORISUT METLEK

2. น้ำตาลทรายป่น NAM TAN SAI PON

3. น้ำตาลป่นละเอียด NAM TAN PON LAILAT

Are they all correct?

Also, refined sugar is shown as น้ำตาลทรายขาวบริสุทธิ์ NAM TAN SAI KHAO BORISUT. Is this correct?

Three kinds of sugar:

granulated sugar น้ำตาลทรายบริสุทธิ์ NAMTAN SAY BORISUT (literally pure sugar)

caster sugar น้ำตาลทรายบริสุทธิ์เม็ดเล็ก NAMTAN SAY BORISUT MET LEK (small grain pure sugar)

icing sugar น้ำตาลทรายบริสุทธิ์พิเศษ NAMTAN SAY BORISUT PHISET (special pure sugar)

All from http://www.mitrphol.com/ (the largest Thai sugar manufacturer).

น้ำตาลทรายป่น NAM TAN SAI PON is literally "sugar dust".

น้ำตาลป่นละเอียด NAM TAN PON LA IAT (note transliteration) is literally "delicate sugar dust".

I'm guessing that the former is caster sugar and the latter icing sugar.

NAM TAN SAI KHAO BORISUT - the KHAO is simply emphasising that it's white sugar in contrast to unbleached sugar is quite popular here.

Based on your comments, for castor sugar, I think I might input:

1. NAM TAN SAI PON. I have been through many sites and it is mentioned quite often as castor sugar.

2. NAM TAN BEKOERI (น้ำตาลเบเกอรี่). That is also mentioned few times and makes sense (to me anyway).

3. What do you think about including NAM TAN SAY MET LEK as castor sugar (removing the 'pure')? Perhaps just NAM TAN SAI MET LEK would be sufficient.

Icing sugar is shown as NAM TAN AISING (น้ำตาลไอซิ่ง), so to avoid any discrepancies, I may just show that, although your theory sounds good to me.

Firstly, the Lin website http://www.trrsugar.com/ (they're another manufacturer) has:

granulated น้ำตาลทรายใสบริสุทธิ์ - NAMTAN SAY SAY BORISUT so it looks like you can't omit the BORISUT. (The second SAY means "grain").

caster น้ำตาลเบเกอรี NAMTAN BEKOERI.

icing น้ำตาลไอซิ่ง NAMTAN AISING.

Personally I'd just use the terms from the two websites which are absolutely definitive and ignore all the rest.

Except from simple dictionary lookups I usually do a Google for the web and for images.

Sometimes you find WiKi articles in Thai AND English to compare.

So e.g. you would find NAM TAN BEKOERI (น้ำตาลเบเกอรี่) = caster sugar in this image:

For NAM TAN AISING (น้ำตาลไอซิ่ง) it is obvious that it refers to icing sugar, although the comparison of the WiKi articles leave a little room for interpretation.

The problem with relying on Wikipedia is that a significant proportion of the articles is generated by machine translation from another language (often English). This means that mistakes can arise.

"Powdered sugar" is, I understand, not English, but American for icing sugar.

NAM TAN SAI PON

NAM TAN BEKOERI

Do you also think I should add:

NAM TAN SAI SAI BORISUT?

NAM TAN SAI BORISUT METLEK?

Icing sugar:

NAM TAN AISING

Yes, as AyG says, 'powdered sugar' is the US expression for icing sugar.

The professionals at Mitrphol use

น้ำตาลทรายบริสุทธิ์เม็ดเล็ (nam tan sai borisut met lek)

for "caster sugar" (fine granulated sugar, size : 0.25-0.35 mm.).

nam tan sai borisut = pure cane sugar

met lek = fine grain

I saw that site and was aware of NAM TAN SAI BORISUT MET LEK, but missed out on the NAM TAN SAI BORISUT.

Yes, I noticed that after I posted it, but it was too late. It's not the eyes that are a problem - it's the brain.

If you don't mind, I will have attached a summary. I would appreciate it if you could tell me which of the words in Castor Sugar I should leave out. Just mentioned the numbers.
