What may the 30-year old man be interested in – for example scuba diving or...?  FullMoon Party or a quiet Bounty-style beach..?  etc. – that may make answers more usable.

I can mainly reply for Koh Samaui, and a bit Koh Phangan, but will gladly try to help you.

"Middle range accommodation",  shall I presume that's in the level around 1,500 baht..?

Plenty of accommodation in samui for all budgets.

Things to do. Walking street in one of the towns , big Buddha, fisherman's village for some food and drinks , chaweng has solo bar or ark bar for nightlife.

Things to avoid. Getting ripped off by taxis , hiring a bike to get around the island , drink driving , confrontation with anyone .
