  3. He's having a laugh. I was in around 3 months ago and ordered a pizza with toppings of chicken and green pepper. I cound not believe how thin the the green pepper was cut. It must have taken hours to slice it that thin and really how it was done by hand I really have no idea. The chicken pieces sprinkled on the top were i kid you not about 10 and were no bigger than the size of a tooth filling. I forget how much it was extra for these extras but it was joke. The kitchen and the fittings would not be out of place in some high class joint in Manhattan but what a let down(must have cost a fortune to create). This is a place that just has to close as they really are cluless or he's having a joke as postmanpat writes. Sad but true..........why spend a fortune on shop/kitchen fitting and then produce rubbish?

  6. If I am correct from reading another post this enquirery is about milk and not beef. If you want a supplier of cheap fresh milk (not pasturized) then go to the Chiang Mai university agriculture department. If I remember they sell 1 liter for 25 baht. They may reduce that cost if purchasing large orders.

    If you are going to make cheese, I would recommend taking a cheese making course from a professional. There are too many people trying to make cheese without the proper technique and it can be fatal. Botulism is nothing to take lightly. But since you are a professional butcher and probably make salamis and other dry cured products you know the risks.

    thank you for you reply and like making sausage and bacon we manufacture in a professional way as not to have things like botulism and all our food products have to go to be lab tested for the FDA which we hold certificate for and we have our own team who are specialist in cheese making and we need only raw ingredients and milk is one of the products we need. i have been to the agriculture department at the majo university and this is ok but they cant supply my company in the long term. i was not aware that there was an other agriculture dept at chiang mai university ?? but thanks for you reply and we will offer you a piece of our cheese to try first when made. i think it will do you more good than harm.   8. Seems pretty much a cottage industry here rather than the large scale ranch style system.

    You'd better off looking for a large market operation that bought and killed regularly.

  9. maybe you could list what fine restaurants in chiang mai sell your products.

    not sure i can list or not ? we supply all major restaurants and hotels 5 star etc

    Are you allowed to tell me the size of ya currys ??

    we now sell indian currys in rimping now in the freezer section as a set meal. chicken tikka masala - chicken rogan josh - chicken korma -chicken vindaloo - and meat samosa. we are in rimping mee chok and will be in all the other stores this week with the new line curry's. the size is 350g with pilau rice, set microwave meal. if buy direct i can do a better deal. meals on wheels 4u can deliver. or buy direct and get a free bacon sandwich and a cup of pg tea

  10. I don't think we have ever met, SausageKing, but I have to say, through your writing , you seem like a very likable guy.

    I like and respect a guy who makes a mistake, accepts a constructive critique with grace, then goes on to make all new mistakes :D ...... seems to me you're our kinda guy.....

  11. While I applaud your desire to go into the cheese business and wish you all the best of luck. I would likt to suggest that you do a little study on cheese and the cows they come from....... I see you are looking for beef cattle farms in CM. Could I be so bold as to suggest, politely. that if you are going into the cheese business, wouldn't "Dairy Cows " be a better source ???

    :unsure: yes we have found some dairy cow at majo uni project but looking a well established farm and we are doing our home work. wow i writing in small case now ha ha
