A few people with dual citizenship in NI did it already and renounced the british citizenship.
The problem is it can take 9 to 12 month to get rid of the british citizenship. -

This is a misunderstanding. The officer at the border post has to issue a visa if the family member has none and can prove the relationship to the accompanied EU citizen.
The problem is to reach the border. Normally no airline let boarding a third country citizen without a visa if the destination is in the EU. -
There are not much preconditions to fulfill for the family member of a eu citizen if the eu citizen exercise his right of free movement in the european union and is accompanied by the family member. He has simply the right to do so.
Copy of the EU passport, marriage certificate and a declaration of the eu citizen in writing that the family member will accompany him. That is it.
For a durable relationship prove for this relationship. -
As far as I know spain don't acknowledge a durable relationship.
The workaround is to fly via Amsterdam and get a schengen visa for the family member of a eu citizen from the Netherlands.- 1

It is possible to extend the 30 days to 59 days at every immigration office and also directly at the airport. There is a fee for such a extension.

so is it possible to buy a throw away ticket for onward flight from some airline without using that ticket and without loosing that money for that ticket?

Technically a family member cannot overstay a visa if accompanied by the eu citizen but it can produce a lot of discussions with border officers.Maybe it is a good idea to write 90 in field 25 at the schengen visa application form.

180 days validity and multi entry is good but why not 90 days duration of stay.The schengen counting of days is different to Thailand.

update currently the EU delegate for Thailand is investigating this, meanwhile the Italian Consulate in the uk says as my Wifes visa is only short term 6 months they cannot issue a schengen visa to her?????????? seems odd to me? heres what they said
As your wife has a C-VISIT visa to the UK she is considered a temporary visitor to the UK and would, therefore not be eligible to apply for a visa into Schengen until she obtains a longer UK visa. . She should apply for her Schengen Visa in her permanent place of residence (from Thailand)
Point to the visa handbook C_2010_1620 part III and ask them where this clause is written as precondition for a visa of the family member of a eu citizen.

Art 18 TFEU non-discrimination doesn't allow to handle eu citizen differently.
In the first place it is the right of the eu citizen to have a family life.

In my opinion it is simply not possible to change the directive.
The right of free movement is given in the Treaty on the Functioning of the European Union (TFEU). That is primary law.

You could point to the visa handbook Part III

and ask them if they recognise a decision of the EU commission.
If not you want a reason in writing.

For the entry visa you could ask the central visa unit:

If a visa is only necessary for crossing the border all other schengen countries have nothing to do with this border crossing. The other countries can issue a visa but there is no obligation.

Malta recognize dual partnership after 2 years living together.
There should be a visa possible for the family member of a eu citizen.
