Impossible.
Anyone who's ever hunted large game, or worked in a kitchen would have plenty of experience breaking-down a carcass.
It's rather easy if you have the right knife or two.
A skinner and a butcher's knife would be enough to take apart a moose. Having a cleaver would be faster, but messier.
I'd think it'd be similar with humans as long as you don't have to stop and puke every few minutes.
But a penknife wouldn't work.

You've listed all the symptoms of sleep apnea, including your age.
You keep waking-up because you have stopped breathing and eventually wake yourself self up, -which is better than having a stroke.
And yes, it can lead to dementia.
Get tested by a sleep specialist immediately, and if recommended, buy a CPAP machine (usually covered by insurance).
Don't want to spend the money?
Do you think it's cheaper to have a stroke, heart attack, or dementia and need someone else to wipe your backside every time you soil yourself?

Popping one's collar was originally meant to shield the neck from sunburn when participating in WASP sports such as tennis, golf, lacrosse, sailing, riding, etc.

So this is outside and will be exposed to sunlight UV, as well as the elements?
If this is the case do not use epoxy-based paints as epoxy can yellow or become cloudy when exposed to UV for long periods of time.
For outdoors use, polyurethane would be a better solution.
