Back to Back Ed visa

Hi, my girlfriend is currently on her last few weeks to finish her thai language course. She did levels 1-3 last year for 9 months and levels 4-5 this year for 6 months and will end on October 4th. We are both Filipinos and I am awaiting my publishers documents for a non-m visa as a writer.

 

My question is, could my girlfriend get 2 back to back ed visas and process the documents from a different school before her ed visa expires on the first week of october? She said it takes 2 weeks to process the letter from the MOE which is enough time before her date of departure. She wants to study and stay here legally for the sole purpose of us being together and at the same time she wants to learn. Which embassy is the most lenient?
