I've had the urge to make some toffee lately. Not that I'm a sweet tooth, (I'm not pregnant either, just look it), just to impress the family kids. Had a look at a few recipes on the internet but wondered if anyone had a "tried and true" using honey to replace some of the sugar. My old Mum used to make some great honeycomb toffee also.

If you are looking to make the toffee healthier by using honey instead of sugar, please be careful. It seems to be an open secret here that most honey is mixed with sugar syrup.

I buy the special organic honey at Baan Suan Pak Health food store near The President Hotel, across from Aden Health food store. It tastes great and the owner swears it's the real deal. :o

Ta General, I was thinking more of taste than health and my Mrs came up with three bottles of it while I was away when I mentioned I might have a go at making a liqueur with it. No idea where she got it from and it would be a waste of time asking if it was possibly doctored, but it tastes like honey which would be the point of the exercise.

I think some one mentioned that a lot of honey gets watered down when we talked about making mead last year.

When I lived in Vientiane you could by it still on the comb in the big produce market near the bus station.
