I have car and bike licences that expired in December 2024. They were the 2-year type. My understanding is that if I renew I will have to redo the theory but not the practical. The thing is I'm intending to be away from Chiang Mai for a while and will be leaving the country a week or so after I get back, so I'm trying to understand the timescales before confirming my side trip.

If I show up early, will it be a one-day mission? (Do I even need to show up early?)

If I'm going to have to go back a second time, will they let me choose the date, or will it be a case of "if you're going to be away then, you'll just have to come in again after you get back and restart the whole process"? I won't have time to do that before leaving Thailand.

My side trip is cancellable for the next few days... I want to go but I do need to get these licences renewed, so would be grateful for any intel.

Assuming you’ve completed the e-learning, just bring your documents and get there early, like at 7:30 and do the test thing on the computer.
