i sometimes pickle them red ones, vinegar and pickling spices, chuck in the onions, leave at room temperature for a couple of days then a week or so in the fridge, pretty ###### good if i must say myself :o

also pickle sliced cucumber, but chuck in a couple of large sliced chilli peppers, that certainly gives em some bite :D
