Yes, as Chinese you can apply for an educational visa. The visa won't that cost much, just checjk the embassy website.

A Thai language course costs around 29,000 a year and would require you to study Thai for about 4 hours a week minimum. For more information you can have a look on top of this page. If you click on the banners of one of the schools there, you can find more information.

Note that there are language schools all over Thailand, so you can choose where you want to live and study.

If you enter without a visa you will get a 15 day visa on arrival.

It would be best to get a tourist visa if you do not enroll in a school and get an ED visa before leaving.
