I've been thinking about relocating to New Zealand, to Auckland. The weather seems nice, housing is cheap and it looks like I could be well off there with my Thai wife.

I am Canadian, what are the options for me to move there? I'm running my own business "over the internet", and could easily establish a business there and hire a few people. Anyone care to point me in the right direction? I'm asking here because of my Thai wife, I wonder if it could complicate things.

Do I need to apply for a "permanent" visa before I go or is it something I can do while I'm there?

I suggest you look carefully at the New Zealand Department of Immigration website. There are strict rules for immigration to New Zealand but you should find their website useful. Bert White.

Either a long term business visa, which converts to a residence permit upon two years of successfully establishing a viable business beneficial to NZ, or shell out 1.5 mil to invest in NZ, such as equities or government bonds or anything else in between, except property. In return, you get residence within 4 years of making the investment. Wife unlikely to be a complication in either case unless she has character/ health issues.

You might find it interesting to google New Zealand blog. They have lots of info that should prove interesting to you. Covers the economy and things like real estate and unemployment and peoples attitude about most everything.

It's a nice place and good choice if you don't mind the cool weather but after Canada it should feel tropical.
