I have recieved my approval documents from the Thai Ministry of Education, but just found out I have to have an operation before I leave. Does anyone know what the time limit is to go to the embassy, and from the date stamped by the embassy to go to Thailand? Thanks for any help.

Well, it's at least a month, because that's the time it took me to get my visa from receiving the docs from the MOE (this was a couple of years ago). With regard to coming back to Thailand, the validity depends on the type of ED you get. Single Entry = 3 months; Multiple Entry = 1 year.

To get the most out of your visas it is best to wait till your current visa is close to expiration and then go to get your ED, it is not necessary to go and obtain it shortly after you get your paperwork, we have about a 1,000 students on ED visas and never any of them had a problem with that.
