My wife and I have been staying in Thailand on the 12 month retirement visa for 4 years but as it is not possible to have two lots of 800,000 baht in the bank we wish to change to having the 800,000 baht for myself and my wife being classed as my dependent. Could anyone tell us how we go about doing this? :)

You will just apply as always, your wife will ask for the extension based on being a dependent. That should be it.

Your wife will now be dependent on you. if you have to leave the country (not menaing for a holiday), or when you die, she will also have to leave. Your permission to stay ending means her permisison to stay also ends.

You would get an annual extension of stay based on retirement from immigration as usual. The wife would them apply for a dependent extension of stay piggybacked to your retirement extension. See 2.20 of the extension rules.
