The night market opens every night, and the main market, I assume, closes in the early evening. It's interesting in the late afternoon as many take-away food vendors set up stalls on the eastern side and people come there to get food to take home.

There's an interesting market at MaeSai, about 60kms north on the Burmese border, and also in the town of Tachilek just across the river if you want to cross the border. (500 baht for a day pass on the Burmese side).
