dddave
What is the Thai name for fermented black beans, sometimes called salted Chinese beans. I want to try to make my old Cantonese favorite "Lobster Sauce".
Jingthing
It's a Chinese imported product and not used in Thai cooking and it wouldn't be found in a normal Thai foods market. I buy it often at Tops in Pattaya and also Foodland. There is also a product prepared for chicken with black bean sauce from Lee products, but the results from cooking from scratch with the beans tastes much better. I smash the beans with garlic with a mortal and pestle, it's kind of fun. Edited January 11, 2011 by Jingthing

Gippy
I buy them from the Big C, it's on the same shelf as the dried Chinese mushrooms etc. Labelled in English as salted beans.

Yes, but on the brand I buy there is also a Chinese and Thai label as well.
