For a lighter tasting baked potato try putting in a little butter, pancetta bits, and some creme fraiche in place of the sour cream. Sprinkle chives, fresh grated parmesan, and top the creme with dill.

Here's my #1:

Twice Baked Stuffed Potatoes

Bake large potato(es) in the normal fashion.

When finished, cut in half lengthwise, and scoop out the potato leaving the halves intact (as shells).

In a bowl, mix the potato you scooped out with the following:

-butter

-crumbled, crispy bacon

-sauteed onions, scallions & garlic

-blanched broccoli, small pcs.

-shredded Cheddar or Pepper Jack cheese

-salt & pepper

-a little cream or milk (optional)

Now, fill the empty potato skin shells with the mixture from the bowl.

Bake again, for about 20 minutes, or so. Remove when the tops are bubbling-browned and crusted over a bit... et voila:

Mmmm good flavours.....for me today get a mixing bowl add some cheddar and monterey jack a little sliced onion some diced apple mayonnaise and a good twist of pepper.

Mix well and spoon generously over the steaming spud... B)

Anyways I'm in but you'll have to wait 'till May......are you going to be mine host for this one?.....some of that cider would go down well as an accompaniment hehe? :D

Peanut butter on a baked potato does not sound good to me, but either does baked beans or coleslaw and some people go for them. :blink:

Sour cream, chives and bacon bits sounds a lot better.

not sure what a lardon is, but if it is like bacon bits (real), then that is nearly my favorite topping set.

Only I would add a dab of butter first (so it melts), then add what you have listed above. Yum, indeed.

Yukon gold + Good butter, sour cream, chives, bacon bits, a little salt_and a medium rare bbq'd rib eye, glass of nice red, one espresso, the remote control and wake me in the morning ;)

You can't beat chicken curry on a couple of large baked spuds instead of rice.....

Try a bowl of chicken curry over browned-top, cheddar mashed potatoes... amazing!

Laap moo works great too, it's like a Thai shephard's pie. Lot of Thai food goes well with mashed potato if you're tired of rice

Make a big pot of chilli.....a good spoonful on top and freeze the rest for later.....great popped in the microwave when you're pissed! :D

Well lets start with where to buy good potatoes Our supplier in Laem Din is finding it increasingly hard to find the Chiang Mai potatoes and sells us the sweet Malaysian spuds, which taste like large yams

Makro has good tasting spuds.

Yes there lovely and sweet from Japan.
