Education Visa

Does anyone know if there exists a thai language course that teaches in blocks (sometimes called sandwich course) ie intensive for short periods with longer breaks and would this type of course be approved for education visa? For example a course may be for 2 weeks intensive then a break of 4 weeks and repeated.

It is one option I am looking at (first time vistor to thailand from Australia and under 50). I am looking to stay and explore the different monasteries (while learning the language) with a view to ordaining in due course .
