We are 2 kiwis who entered Bangkok nov 17 and nov 18 then went to cambodia 8 December via poipet. we are still in Cambodia.

We both have flights booked out of bangkok 20th and 22nd, and need to get back to bangkok via poipet.

What visa requirements do we need to organize before we make our way to poipet? Or can we just present ourselves at the poipet border?

If you’re leaving in December, then no problem, just show up at the border.

You will receive 15 days of stay at the poipet border immigration.

If you cross the border in Poi Pet into Thailand you will automatically get a visa on arrival, valid for 15 days. So no problem with your flights

once you arrive PoiPet stamp out of Cambodia, walk across the bridge, get to the Thai arrival building on the left side of the road, fill out the Thai Immigration card and Thai Immigration will stamp you back into the country, for 15days.

No requirement to present.

"...you will automatically get a visa on arrival, valid for 15 days."

15 days it is, but it's a visa exempt entry, not a visa.
